I am still around, but no weight loss. I swear I feel like I am shrinking but I just am not seeing that scale move.

I hope it is the building muscle in my legs from this running because I am about to go crazy!!

I can not say enough about taking measurements. THIS is where you truely see the difference and in the end what matters. If you are losing inches who cares if the scale moves.
 
Hey everyone, FIRST I am reporting in for ohMom, she has had a minor family crisis and will not be checking in on WISH for a couple of days. PLEASE, PLEASE, PLEASE send prayers for her and her family. I know she would appreciate it. I will post a challenge for us this coming week, and help out until she is back.

I have been very MIA and promise to change that! I am now officially a Godmother! Today was the Christening and it was a beatiful ceremony. And I did great with the buffet and desert table. Very proud of myself.

I also did pretty good with the phone interview. I have to still discuss with them about scheduling a regular interview, first I needed to crunch the numbers she presented me with. I am excited to proceed and hope they still want to interview me. Keep your fingers crossed for me!:goodvibes
 

Wow, quiet today.

I made 2 of the new recipes today--one was great, one was a disaster! Now I have to figure out how to post and cross post them...

Hmmmm, I went to the Healthy Eating place to post my recipes, but alas, I cannot find where to put them! They are not WW recipes (I'm not on WW), and they aren't low carb per se. So where do I put them???:confused3

Well, I'm just gonna put them HERE!! ;)

Tuna Rice Casserole

4.5 cups cooked white jasmine rice
3 cans tuna, drained
3 cups white sauce (see recipe below)
1 cup frozen peas, thawed

Mix all ingredients together, place in casserole dish. Bake at 350 for 10-15 minutes until top starts to brown in spots.

Serving size is one cup
Calories--289
Fat--9.6 grams
Sodium--419 mg
Carbs--33.7 grams
Fiber--1.3 grams
Protein--14.6 grams

<<White Sauce for Casserole>>

2 T corn starch
1 1/3 Cups almond milk
2/3 cup vegetable broth
4 T margerine
1/4 cup chopped celery
1/4 t salt
1/8 t pepper

Mix cornstarch with milk and broth until smooth. Saute celery in melted margerine until softened. Add to milk mixture, add salt and pepper. Bring to a boil over medium heat, stirring constantly. Boil 1 minute.

(you could substitute regular milk for the almond milk)

All I know is, this stuff was AWFUL!!! But hey, I tried!

Veggie Spaghetti Sauce with Turkey, Ground Beef and Turkey Sausage

2.5 T EVOO
1/2 C packed chopped fresh parsley
2-3 large ribs celery, chopped
1 medium onion, chopped fine
2 cloves garlic, minced
1/2 t basil
1/2 t oregano
29 oz can no salt tomato sauce
8 ounce can salted tomato sauce
16 ounce can crushed tomatoes
8 ounce can no salt crushed tomatoes
1 1/2 red bell peppers, chopped
2 zucchini, shredded
1 t salt (if desired)
1 lb extra lean ground beef
1 lb ground turkey breast
1 lb turkey sausage

Heat oil in skillet. Add parsley, celery, onion and garlic, saute until tender. Place in large crock pot. Meanwhile, brown all 3 meats and set aside. Add tomatoes, sauce, spices peppers and zucchini to crock pot, mix well. Add meats to crock pot. Mix well. Cover and cook 4-5 hours on high.

Makes about 11 servings

This freezes VERY well. I made a double batch and now have 22 individual portions sitting in my freezer! I eat it over rice, but you can put it over pasta, potatoes, cottage cheese, or just eat it plain like stew. YUMMY!!!!!

Did my last chance workout and I'm proud of myself - did my first 4 mile WATP!

The scale was showing a slight gain this morning so hopefully this will at least knock it down to a maintain or maybe even a loss for the weigh in tomorrow.

Sure hope y'all come out of hiding tomorrow after weigh in!

Anyway, here's my 3rd new recipe (and it was a HUGE hit here tonite!)

Stuffed Peppers (from SparkPeople.com)

3 bell peppers (color of choice--I used red)
1 cup cooked rice
3/4 pound ground turkey
2 cloves garlic, minced
1/4 cup onion, chopped fine
1 can diced tomatoes
Small can tomato sauce
1 T EVOO

Cut the tops off the peppers, rinse and remove seeds and membranes. Put a small amount of tomato sauce in baking dish--enough to cover the bottom. Stand the peppers up in the dish. Saute onion in EVOO, add garlic and saute, add turkey and cook until browned. Add rice and tomatoes. Stuff into peppers. Bake 30 minutes at 350. Top with shredded cheese for last few minutes if desired.

Try it, you'll like it! Even my kids loved it--they asked if I could make it again, alot of times!:thumbsup2
 
I have had a couple of bad weeks.....I have just struggled. And as usual not posting and bad weeks go hand in hand for me. HOWEVER.....I did call and reactivate my gym membership tonight and am planning on getting up bright and early in the morning. I'm hoping for a maintain tomorrow....but if it's a gain I won't be surprised....mad at myself....but I am the one who has put everything eaten in my mouth the last week and I'm the only one to blame. But my bad week is OVER and I will be journaling again starting tomorrow. Good luck everyone with weigh in tomorrow!!
