I love TOT and BTMRR at night. On TOT, you can see the park all lit up. Man what a beautiful sight. BTMRR you can also see things that are not as pronounced during the daytime.
Two things I always try to do at night: Jungle Cruise and touring Tomorrowland, which is pretty cool at night. I used to not be a fan of Tomorrowland's lights, but they really grew on me. Know I feel wierd touring in the day light hours.
Both of these are great at night b/c you don't get the sudden change from darkness to bright daylight. And it's fun to see the parks at night from these rides.
Big Thunder Mountain- it feels so much faster and the little drops are a lot more unexpected! Splash Mountain- views of the castle are gorgeous especially when you drop and you can see everything lit up! Jungle Cruise- it's almost creepy but very cool at night!
The two I thought of are Rio Tiempo (Epcot--Mexico) and Maelstrom (Norway). Partly because I always end up hitting those rides after dark, party because Rio Tiempo seems more interesting with dinner eaters there.
Gives you a great bird's eye view as you zip around Tomorrowland. Looking down on TL while on the TTA gives me the idea of what a real city on a planet would be like. And of course the perennial favorite...BTMR.
Expedition Everest IS the best ride to ride after dark at WDW! Look at it, How could this not be the most amazing thrill at night?!?!
But each park has great picks...
MK - Splash (druing wishes of course)
MGM - ToT (it's sooooo scary this way)
Epcot - Mission Space (after a long day of Drinking Around the World)
AK - EE (we already covered this)
There are some rides that IMHO should only be done at night such as Astro Orbiter, BTMR, Jungle Cruise, and Test Track. Doing these in the dark doubles the fun factor!
