Thank you all for your prayers and good wishes--dh is at the VA right now, so hopefully we'll have an answer today. He can't work in a cast, so I guess I will have a new career of vending if he ends up immobile!

LOTS of prayers and Pixie dust :tinker: for DH... tell him to do the best he can, but to not OVERDO it cause it will only be a bigger problem further down the road...

If only I could get him to slow down....men.... You'd be amazed at how upset people get if they can't get their Mountain Dew for one day! This is the only time I miss both of us working for the state.

And I could really use that key lime pie on a stick right now! I wonder if I went to the store and got the frozen single serve key lime pie and got some dipping chocolate.........
 
Michelle, Everybody else, please say a little prayer for my dh. He stepped backwards off his work truck Thurs., missed the bumper, and landed 3 ft. down with all his weight on his right foot. Doctor says it is a torn calf muscle, yet he is hobbling around working 10-11 hour days. :sad2: Then this a.m. the doctor himself calls at 7:40 to say that the orthopedic will be calling for a followup xray--they think his tibia may be fractured!!! Anyway, we are self employed, so no disability....so he works and hobbles, poor baby. Thanks for letting me vent all that.

pixiedust: for your DH. I know exactly what you are going through. Last year when DH and I still had our own trucking business he slipped on ice and luckily only sprained his ankle. I don't know what we would have done had he been in a cast.

Visit the Key Lime Pie Factory....they have the best chocolate. Enjoy, it's yummy.
 
Well, some good news I think. The orthopedist's office person said for dh not to come in till next Thurs. Dh said, "So, is it broken?!? Do I walk on it till then?" He was told that the doctor didn't think it was anything serious, but did want to x-ray the leg again next week. I guess that means they don't think it's broken? The worst part is dh is allergic to morphine based pain meds, so it's just Tylenol for him.

Does anybody know how big your small business has to be to get AFLAC? (I should have done this a long time ago, but we just got big enough to hire the second person in the past year.) There are the two of us and two part time people.

Brenda, I meant to tell you that I started reading The Shack a couple of weeks ago. I've kept it in the car to read while waiting for dd to get out of school, but I need to bring it in the house so I can finish it this weekend. The first couple of chapters were just heartbreaking, weren't they?

You can have 0 (meaning its just you the owner) to 99 employess as a small business to get AFLAC.
 
Michelle, we do still have some Valentine candy left becaue my mom got us each our own bag of candy. Plus every Valentine dd got at school had candy attached. Remember what a thrill it was just to get the ones with the suckers attached? Then you knew it was a really, really good friend!

On a bright note, we still went out for Valentines and had fantastic food at our favorite Italian place. Love the cajun chicken parmesan (with jalepenos!). Everyone's dinners looked fantastic!

Here's a recipe from one of my books. I haven't tried it yet so if you beat me to it, please tell me what you think.

From The Bartender's Best Friend (by Mardee Haidin Regan)
Key Lime Pie Martini
1 oz Licor 43 (aka Quarenta y Tres)
1/2 oz vodka
1/2 oz lime juice cordial, such as Rose's
3/4 oz heavy cream

Pour all ingredients into a shaker two-thirds full of ice cubes. Shake well. Strain into a chilled cocktail glass.

And a couple more that might be worth trying:
From The Bartender's Black Book (8th Edition)

Key Lime Martini
Fill a mixing glass with ice.
3 1/2 oz Vanilla Vodka
Dash Irish Cream
Dash of Cream
Tsp Sugar
1 oz Lime Juice
Shake. Strain into chilled glass.

Key Lime Pie (frozen)
In Blender:
1 cup of ice
2 oz Light Rum or Citrus Rum
3 tbsp frozen concentrated Limeade
Dash of Lime Juice
Blend until smooth.
Garnish with Lime and a Graham Cracker.

As an aside, we just booked a trip for August using said 40% code so I can vouch it's a good deal but I'm sure you're right that it doesn't work with DVC unfortunately. The code is snail-mailed or emailed to the recipient and is tied to your name so they can't be shared.

BTW, we're long-time lurkers. I'd say we're foodies in training and we also enjoy a good drink so your latest posts are always required reading to get us in the mood for our upcoming WDW trips and to think about what to try next. And it doesn't hurt that I watch a lot of the same shows and totally enjoy your references. :laughing:

Nope ... just sometime in October. Still waiting to hear who else is going and then I think we'll have to wait for the 90-day ADR date to pass as well as F&W booking ... then we'll just pick a date that hopefully works for most people and take it from there.

Oh, good, R&C--I wish they'd bring back the cottage pie!

Hopefully last chapter in dh's saga:
He went back to the VA today, orthopedist wouldn't see him still till next week and told him if he's in pain to go to the ER. :mad: Dh marches (hobbles) back to the ER at the VA and finds a very nice doctor and no wait, so finally someone gives him a prescription for an anti-imflammitory/pain reliever he can take. Oh, and dh said the computer records stated it is his fibula that might be fractured. Doc says "nothing serious," though, so whew!

And some brighter news--DD won her school's Healthy Snack Contest and will be recognized at the PTA meeting Mon. night! :dance3: A little foodie in training, if you will. I'm sure you all are drooling for a healthy granola bar recipe, right? :rotfl: Maybe the PTA moms can have an adult beverage recipe contest.

Wolfgang Puck Cafe, Downtown Disney

2 oz Licor 43
2.5 oz Half & half
1/2 oz Lime Juice
1/4 oz soda

Chill glass and dip rim (moistened with lime) in graham cracker crumbs. Shake ingredients with ice. Strain into chilled glass.
 
February 15th, 2009 - The Day After

We had my nephew Dylan and his wife Jen over for dinner on Sunday night and here is the food porn ... simple but tasty.

OK ... this first picture isn't food but I love tulips - they're my favorite flower - and Jay let me buy some for myself on the 14th when we were shopping at Whole Foods.

Since we were having guests we had to have some cheese, so we bought three; in Mickey's left ear is my Fromager D'affoinos (or however it's spelled), in Mickey's right ear is a very special Herve Mons SpringMilk Ossau-Iraty, and nestled in Mickey's chin is Rubiola.

A minor dissertation on the ossau-iraty ... we've had it before but never like this. While we were drooling over the vast array of cheese at Whole Foods, the lady who'd taught the cheese classes we attended over the summer was there. She was chatty and wondered why she hadn't seen much of us. After suppressing my first impulse, which was to say ... you should be seeing more of me - I've gained 15 pounds since that last class we attended (har har har!), we told her that we were conserving funds. She said their traffic had been down noticeably since September and they were offering fewer classes across the board, BUT ... since we were there and it was a special lovey day we must try this zip-zap-grabulous cheese that had just come in.

It was creamy and tender with a slight buttery taste ... when I say this stuff melted in our mouths I mean it. Incredible! So of course Jay and I wanted to buy some and that's when the lady cheesemonger warned us that it was expensive.

We asked for half a pound; after all, how expensive could it be?

$25 for half-a-pound of cheese and it was soooooo worth it. For any of you who've had the "normal" ossau-iraty sheep's milk cheese, it's normally much more firm and dry ... a semi-hard cheese. This version was, to repeat myself, melt-in-yer-mouth, curl-yer-toes good!!! :cloud9:

To go along with the cheese we had some tasty crackers and some sourdough bread. And a chilled bottle of Rosa Regale.

We had a bottle of some French Rose' with dinner ... it was OK but not as good as the one we tried while having our French Regional Lunch at Bistro Paris back in October. Must be a vacation thing.

And then to close out the night we opened a bottle of the mad Hungarian as we like to call the Royal Tokaji ... thanks alot Victoria and Albert's for getting us hooked on this, too!

I made panne cotta for dessert because it's quick and easy to make and I've yet to come across anyone who doesn't like it.

And then because we still had cream leftover from making the panne cotta, I was struck by the brilliant idea that we should make our own whipped cream. So we dropped in a splash of vanilla, some sugar, and some Bailey's and presto-chango:

I have to say, for making up a whipped cream recipe on the spot, that stuff was awesome! We've been using the leftovers this week in our nighttime alcoholic coffee ... yum yum yum yum yum!!!

And lastly ... my tulips on Monday afternoon after they'd opened up a bit. I should have moved them to a larger vase but I was too lazy.
