Thought I'd share some food porn from this past weekend when we took Drew back up to college. We ate at one of the campus restaurants, Ristorante Caterina de Medici. The winners of the night were the soup, the lamb and the panna cotta. Everything was delicious, but those were the standouts. The problem is that if we keep eating like this, we will rival the new hot air balloon in DTD. ;)

This is on a college Campus? Wow.. food has certainly changed since I've been to college. We had nothing like this. It all looks wonderful!
 
SWANGY (SWEET, SPICEY, & TANGY) BOURBON HAM
Serves 8 to 10 people


1 8 to 10lb Bone in Smoked Shank Ham


For the Sauce:

3 Cloves of garlic – minced
1 Medium white onion – chopped
1 Tsp. Olive oil
1 Tsp Salt
1/2 Tsp. Cracked Black Pepper
½ Cup Gulden’s Spicy Brown Mustard
½ Cup Good Quality Apricot Preserves
2 Tblsp. Sriracha Hot Chili sauce
20 oz. can of chunk pineapple in its own juice or one fresh pineapple cut into chunks
¼ Cup Red Wine Vinegar
¾ Cup Bourbon

To make the sauce:

In a large sauce pan over medium heat, warm olive oil and add onion, garlic, salt and pepper. Cook until onions are softened, about 3 minutes.
Stir in mustard, preserves, and chili sauce and cook 3 minutes more or until preserves are melted. Add pineapple with its juice and vinegar, stir in and bring to a boil. Stir in bourbon and bring to a boil. Turn heat to low, cover and cook for 30 minutes, stirring occasionally.

For the ham:

Allow ham to come to room temperature before grilling. Score the ham all over by making shallow cuts diagonally across the service in a diamond pattern. Place in a 9 by 13 aluminum disposable pan, pour half of the sauce over the ham and place pan in the middle of your grill.
BBQ at indirect, medium- high heat, basting ever 5 minutes or so with the rest of your sauce and juices in the pan. Ham should cook about 1 hour or until outside skin is crisp and browned.
Any left over sauce maybe served on the side.

Omgosh... this sounds sooooo yummy... I'm definitely making this for Easter Sunday. I also like it doesn't take forever to cook..

Thanks so much for posting the recipe! We have ham pretty often and I am definitely going to make Drew (my slave chef son) try this out. Sounds much much better than the regular old brown sugar glazed ham. :)

I have to attend a concert at Fairleigh-Dickinson University in Teaneck, NJ next month. Do any of the friendlies know of a neat place to go for dinner in that area?

If you go to FD... you MUST go to B&W Bakery and get the crumb cake... Get off RT 4 at Hackensack Ave - drive about 1 to 1 1/2 miles down... you will see a Target on the right... GO THROUGH THE TARGET PARKING LOT to the other side... on your left hand side you will see B&W... IT HAS THE BEST CRUMB CAKE IN THE WORLD!!!! (they are closed on Mondays...)... oh and the cheese cake will clog your arteries... but I like the marble one best...

I had a friend who graduated from there... I stopped feeling bad for him when I realized it looked like a college with a country club around it... :rotfl:

Just WAIT until graduation... it was something that would make Bendy PROUD!!! It's served by the next upcoming graduation class - soup to nuts including wine...

I do believe that the speaker for his graduation was Mr. Sardi... of Sardi's fame...

They gave out their degrees and literally said "Lets Eat" and the food started coming out the doors... :worship::worship::worship::worship:

BTW... I want to get in to Escoffier... I did Cafe DeMedici... is St. Andrews still there??

Its hard not to run into someone that hasn't gone there, especially when your a foodie. ;) They have some really great specialty dinners that they offer to the students and alum (and donors) and they are a sight to behold. I've heard about the graduation ceremony, so that should be really cool. They like to make a show out of everything up there. If you get to Escoffier, you will totally see the whole Frenchie presentation in its glory.

The problem with CIA is that once you step off their beautiful and teeny tiny campus, its a very depressed area. I would need heavy amounts of medication to live in that area, because it is extremely far removed from what we're used to at home-and we are not city dwellers by any stretch.

Escoffier is very nice, good food. I have recent food porn from there if your interested, as well as from American Bounty. St. Andrew's cafe is still there, but they aren't open all the time. Same thing with Apple Pie Bakery. We stock up on pastries and bread when we go there. The pub is nice too in the student rec center.
 
TOKYO!!! That is exciting!!!!! i can't wait to hear all about it! My fiance really wants to go there someday..me..i am a bit intimidated!

We are excited. We'll only have 3 days at TDL, so I'm hoping to see as much as possible. In truth, I am most excited about Kyoto. I am NOT excited about the flight. Thank goodness my children are used to this kind of life!

I am way more pumped about having burgers tomorrow than I am for Easter. I'm going to make panzanella with them. I'll run 3 minutes down the road to France and pick up some bread for the panzanella and buns for the burgers.:cloud9: I'm really going to miss being here.
 
I loved it when Scotts class was there... they were so glad that the McDonalds had student discounts... they got tired of eating gourmet all the time....

Has your son brought home an entire set of dishes from the Hall yet? Scott used to have to pick up his dinner because he had classes during the dining hours... He just forgot to bring back the dishes and came home with an entire set of 12...

No...no dishes yet from Farquharson Hall. I'm laughing just thinking about errant plates making their way home. :rotfl:

I guess like anything, if you eat the same style of food all the time, you get sick of it. Although for me, I can't imagine...sick of gourmet? Perish the thought! ;)

Actually...kinda possible. All the campus restaurants are staffed by students who have two weeks or less to graduate. Each place, if you look carefully, has a guy (or gal) running around with a clip board-he grades all the students-and takes critique on them and the food from the patrons as well. Of course we only say nice things even when the students mess up (and they do). Now I think that would be a really fun job to have. :thumbsup2

We're all good! I think we need a new weather team, though. We had really dark skies in late morning, the longest roll of thunder I've ever heard and one lightning flash. Then the sun came out all day till about 7 p.m. when we had some rain. No wind, no hail like predicted, nada. Thanks for asking, Chelle! :goodvibes

It was a good day; we had dd's birthday party with four close friends at a pottery place. They had a great time and somehow managed to eat almost two LARGE (10 oz.) bags of potato chips! :rotfl: I said I should have left the cake at home and had a chip bar!

News reports have not been good today regarding these storms, so I'm really glad you're ok Jaime :hug: We've got lots of thunder & lightning and pouring rain now and probably thru the night.

Luvillians ... I cheat on the crab eggs benedict and order them from Dean & Deluca. All we have to do is supply the eggs ... the rest is already done and we just throw the biscuits in the oven and cook the crabbie patties.

They're excellent so if you ever feel like splurging order them ... about $70 before tax and shipping and worth every penny!

ChelleinNC .... those must be the storms that rolled through here last night and this morning. Lotsa wind and lightning and thunder and BIG rain.
