I gather that they are probably few and far between, but what are some bars and lounges that my wife and I can enjoy a nice cocktail and a few appetizers?

The bar at the California Grill is probably one of the hardest to get into. You would have to go to the desk on the 4th floor and see if there was room. There often isn't.
There are many bar/lounges in WDW where you can get appetizers/food and relax with an adult beverage.
The Tamu Lounge at the Poly can get crowded with guests waiting for 'OHana but it has appetizers and is agood choice.
The Crews Cup Lounge at the YC is really nice. It has a "clubby" feel and offers a limited menu from the Yachtsmans Steakhouse next door.
You can order a drink and food in the Tune In Lounge at the 50's Prime Time Cafe.
There are many, many others and I am sure others will chime in.
Have a Great Trip

I have been to the bar at CG many, many times and have never been turned away.

In addition to the ones mentioned,
Here's some that I thought were fun:
The Rose and Crown at EPCOT
Big River Grille and the ESPN Club at Boardwalk
Rainforest Cafe at DTD

And then kind of out of the way:
Classic Concoctions at POP
Crockett's Tavern at Ft. Wilderness

Classic Concoctions at Pop Century closed some time ago. The only bar there now is the pool bar.

You MAY be turned away from California Grill if you arrive too close to time for the Magic Kingdom fireworks. Go early or after the fireworks and you should have no problems.

We enjoyed delicious cocktails and apps in the Territory Lounge while waiting for our ADR at the Artist's Pointe at WL. :thumbsup2

Raglan Road. My DH and I love to sit at the bar have a few drinks and order some of their fab appys.

Paridiso 37 and the Blue Zoo. Shula's also has a small bar/lounge and you can even get a full meal there. Citrico's and Flying Fish are also nice bar spots.

Actually the California Grill check-in desk is located on the 2nd floor of the Contemporary Tower.

On a recent trip we had had a big lunch and didnt want a full dinner. We went to Paradiso 37 in DTD, sat at the bar and had drinks and a light dinner. It was nice. they actually have an indoor and outdoor bar where you could do this.

Could you get the smokey portabello mushroom soup in the Territory Lounge?

Sure!
As you can see, they are somewhat more than few and far between!!

And tho I've walked past several times but never sat there , Il Mulino has a nice bar/lounge area.
