Anyone who has done B2B cruises, have you done early dining for the first cruise and late for the second or vice versa? Would this even work if we wanted to keep the same serving team?

We are doing the British Isles for one of our cruises next year and all aboard ranges from 6:15 -9:00 p.m. We don’t like eating late then going to bed but we also don’t want to rush to get back onboard for early dinner, especially on two of the port days.

I guess the other option would be to keep the early dining that we have booked and go to Cabanas for a couple dinners. Daughter needs GF and preorders each evening. Can we do this if eating at Cabanas for dinner?

We have done B2B and were given the same dining serving team. I don't think it would matter if you wanted to do first seating for the first cruise and second seating for the second cruise. The person to ask about keeping your same dining room servers would be your head server. This is one of their jobs/responsibilities, even though there are those who think that the head servers don't do anything, except to collect their tip envelopes on the last night of the cruise. Not so. As a matter of fact, our head server just assumed that we would like to keep our same servers and automatically arranged it for us. Book your dining seatings the way you want them. No need to miss out on dinners in the main dining rooms and go to Cabanas, unless that is your preference. Your head server can also take care of your daughter's GF needs.
 
@Minnie & Daisy has a good overview. Before you even get on the ship you can set your dining preferences to Main or second seating. Generally your head server will come to you and ask about your dining for the second cruise a few days prior to the end of the first cruise. Your head server should be able to fit you into your preferred dining time for the second cruise AND keep the same servers if you wish. I would be surprised if you couldn't pre order if you know you are going to be in cabanas one night if you know ahead you plan on going there. Even then they would be able to support any allergy concerns.
 
Just another note about the GF offerings. Some of the menus now have GF next to the items that are GF.
 

My wife and I will find out in about a month. We are doing B2B cruises. Just the two of us for the first one (Quebec to NYC) with second seating, and then main dining to the second leg (NYC->Bermuda). One our daughters and her family will be joining us for the second cruise, and she wanted the earlier dining for her 4 kids. I know my wife put in a request for a server for at least the second cruise for someone we had in the past that she feels that that kids would enjoy. I don't remember if we had also requested that server for the first cruise.

We had late dining for our Med cruise several years ago. And early for the following WBTA.

At the end of the first cruise the head server came by to ask if we wanted to continue with the same servers, or change. We said we'd like to stay with them, but for the second cruise we were linked with another couple (joining us on the second cruise) and I didn't know if they had requested any specific cruisers.

Turns out the 4 of us were seated with two other people, and we wound up with different servers (although our "old" servers were only about 2 tables away from us. The two other people (both single cruisers) never showed up, so we were only 4 of us at at 6 top. One night our friends went to Palo, and the head server put us at a table back with our "old" servers (an 8 top that only had 6 people at it). He said he didn't want us to feel lonely.
