Sausage Balls

2 cups Bisquick
1 pound sausage
10 oz. pack of shredded cheese (or just shred your own from a block of cheddar)

Directions:

Put everything in the bowl and mix. This is easiest to do with your hands though it feels pretty gross at this stage.

Roll the mixture into balls, a little smaller than golf balls.

Place the sausage balls on a cookie sheet.

Bake at 350 degress F for about 20 minutes. The Bisquick balls should be lightly browned wtih the meat cooked through.

I usually make 3-4 batches and my BILs stand at the oven...... waiting with mouths watering.

We made this awesome pumpkin dip for Thanksgiving. You can dip graham crackers, Nilla Wafers or Ginger Snaps in it. It was soooo yummy.

I always use the Jimmy Dean hot sausage, one egg and a little milk to the mixture, it holds together better that way and taste great.

A tradition in our house is cocktail shrimp. Most grocery stores sell frozen shrimp by the bag. The small shrimp are fairly inexpensive and are best for shrimp cocktalk. If you get precooked ones, all you do is put them out on xmas day. Put them out a litle before you plan ot serve them. they will defrost slowly and still be quite cold. If time gets tight you can speed defrost by running them under cold wate ina strainer. the best cocktail sauce is made from store brand ketchup and the jarred horseradish they sell in the refrigerated section of most stores. You can also buy premade sauce.

All in all very easy.

Another seafood option I love is crab dip. Melt 2-3 tablespoons of butter in pan Saute a small onion chopped fine. Add 1/2lb of the best jumbo lump crabmeat you can obtain. Best with blue crab crab meat, you can use a lower grade of crabmeat, like the canned stuff, but it won't be as amazingly yummy. I made this with frozen lobster meat and it was very good. Cook the seafood over low heat - just until butter gets soaked up - about one minute - try not to break up the chunks. turn off heat and add two packages of cream cheese. Stir gently and minimally while cream cheese softens. Add two heaping tablespoons of mayo. If you like worchestershire sauce, you can add three drops. Add one cup of grated parmesean cheese. Again, use the real stuff from the grocery store's cheese case, not the shalf stable stuff. Ideally you want grated cheese, but I suppose shredded stuff would work. I've never tried Sargento type bagged cheese, but that would probably be fine - you only need about 1 1/4cup of cheese. Reserve the last 1/4 cup of cheese. Stir all gently until just blended.

Transfer to a ramekin dish that is oven safe to 375 degrees. Top the mix withthe remaining grated cheese. bake for about 18 minutes. Keep an eye on it. The top should get bubbly, and browned. the mix should be hot and melty. you can sprinlke the top very lightly with a mild green herb for color - like cilantro or parsley - dry or fresh. With lobster - for Christmas this could be kind of festive - pink/red lobster meat with fresh green herbs.

Serve immediately with crackers and/or chips.

Oh yeah - you can also add artichoke hearts. only the kind packed in water. Rinse and drain before adding.

then there is it super easy Lipton onion dip - sour cream and lipton onion soup mix. Again not low cholesterol, but yummy and easy. best served with regular potato chips.

Our tradition is what we call "Christmas Eve Sausages". So simple and very popular.

A couple of packages of Cocktail Sausages
One jar of currant jelly (grape can be substituted)
Two healthy tablespoons of horseradish sauce (more if you like more kick)

Mix the jelly and the horseradish sauce in a medium sauce pan and heat until bubbly. Add the smoky links and heat thoroughly. Serve with a toothpick.

It really doesn't get easier than this. These go fast.

Thanks to all for these great-sounding recipes!

My question is about the spinach balls and the sausage balls: What do you serve with them? Any kind of sauce?

Thanks and Happy Holidays!

I make the spinach balls and don't serve anything to dip into, just keep popping them in, one after another!

Here is one of our Favorites

You take cream cheese and spread it at the bottom of a baking dish
Cook Jimmy Dean Sausage into little pieces not the links and layer on the Cream Cheese.
Open Mild Salsa and drain a little liquid out and layer on top of the sausage
Sprinkle Shredded Mozerella on top of Salsa

Cook at 350 Degrees until the cheese is melted and has a golden color

This year I'm taking something super simple. Melon balls (or chunks) wrapped in prusciutto. Yum!

we make vegetarian "sausage" balls (using Morningstar Farms sausage patties) and we serve them with spaghetti suace, but we also add italian spices, fennel, parm and other spices to our mix.:)
