Anyone want to help me plan?

It looks like we are heading to Florida around the 14th of March for a week or so and doing 2-3 days at Disney. It will be myself, my mother in law for at least one of the days, my 3 girls (7, 5, 10 months) and possibly my cousin for some of the time. This was supposed to be a budget trip (actually it was supposed to be one day at Disney while we visited my inlaws for a week, but ITS DISNEY WORLD) so trying to do as much magic for as little money as possible. I know one day will be MK. We probably want to meet Minnie, Rapunzel and Snow White. We want to eat lunch at BOG. We haven't been to DW since early 2013 so they were still using the paper FP and 7DMR was not yet open. So what are the most magical/must do's at MK? I'm usually an open to close, must do everything type and I know ODD and MIL aren't going to have much fun with that so help?!?! And what to do at AK? I think that one's easier. We need to do the safari and FOTLK and EE if I have another adult with me. Other than those, we'll be fine wandering.
If we get a 3rd day, I am debating between a second day at MK (though it might kill me to only do half the parks) or adding park hopper and splitting it between Epcot (Nemo, Turtle Talk, TT, the ride in Mexico, trying the coke) and DHS (ToT if I have another adult, meet Mike & Sully, Muppets, TSM, and the playground). Opinions? Also wondering the best schedule. Was thinking about M-MK (trying to get DH to okay a night at ASM), T-AK, Th or F-3rd day. Or M-MK, W-AK, F-3rd day. In laws are about an hour and 20 minutes away supposedly. So, anyone have any opinions on any of this? Our last trip, ODD was 5 and decided she didn't like DW because all you do is wait in lines (and we utilized FP very well). Hoping to avoid that this time!
 
I'll start it off.

With the 14th of March time frame, you'll be hard pressed to avoid long lines. That's the beginning of spring break, and as you get closer to Easter on the 27th, it will get busier.

Mondays are usually more crowded at MK than other days of the week. Can you do AK on Monday instead?

I suggest easywdw.com as a starting point for planning your days. He also has some good cheat sheets to help you avoid the lines.

It'll be a busier time of year due to spring break, but still very manageable. If you can swing it, Undercover Tourist has a sale on 3 day Park Hopper + bonus 4th day for $365 per adult/$345 child. Compare that to a basic 3 day pass, which is $292/$272. Or, you can get a 5 day basic pass for $323/302.

Definitely do one day fully at MK. Do you already have a reservation made for BOG? Unfortunately, you probably won't be able to get a reservation this late in the game. Instead of BOG, what about trying to do breakfast at Akershus, that will allow her to see several princesses without having to use a FP+ or wait in line. I did a quick check and there are still some breakfasts available during that time frame.

So for MK - for those ages, so much of it is great, but Splash, 7DMT, BTMR, Mickeys Philharmagic, Little Mermaid, Winnie the Pooh, Enchanted Tales with Belle (another great way to meet the character) etc...
