Anyone on the receiving end of a Meal Train?

The people that I know who have been the recipient of a meal train were VERY grateful for it, but the thing they got tired of was heavy meals. Everything was pastas, potatoes, cheese, creamy soup based casseroles. One friend said by the time the train ended she had gained 9 pounds. :/
 
I loved white chicken enchiladas (rice and beans for sides), ham, and taco soup. Honestly, other than one meal (long story), I ate everything and was happy to have it!

Oh, and it's always better not to have to return dishes!

Was this in white sauce? Were the rice and beans separate or mixed? Maybe I'll do this.
 
Using tin- foil pans is a great blessing to the recipient. Having to hunt down the owners and return the pans may be too much right now -just one more thing to worry about.

I agree with pp that fresh fruit or simple veggies may be really appreciated.

It is very nice of you no matter what you bring.
 

As the weather starts to cool down, chili could be nice. Just keep it mild and add some "hot" on the side for those who like it that way. A nice fresh salad and break goes well with it.
 
A couple of years ago I participated in one for several months. I signed up about once every 3 weeks. I loved that you could see what others near your date had taken so that you didn't repeat. If I was pressed for time, I would do a rotisserie chicken with a tossed salad and mashed potatoes or I would have pizza delivered. When I had more time I would usually do chicken enchiladas or chicken pot pie.

Besides those, I would think chili/rice/all the extras would be a nice change. Or...call ahead of time and ask for their fave restaurant/ take-out place...after lots of lasagna/pasta, Chinese food or a burger might be a welcome change!

Also, like someone else said...don't forget breakfast! I love a good pumpkin bread, or some muffins...always nice to have for visitors, or bagels/cream cheese. Also...sometimes it's nice to get some snacks you wouldn't usually purchase...chips and good salsa/guacamole, cut up carrots/celery with hummus or some other dip, strawberries and melted chocolate, anyone? Or even just some cheese and grapes. Semi-healthy stuff for when they want a treat and aren't up for a whole meal. :)
 
I agree no lasagna. And yes! to the throwaway foil pans.

I've made a number of things over the years.

Chicken rice & mushroom casserole - there is no condensed soup in my recipe, it's easy and reheats well if there are leftovers. I received this dish after my youngest was born and it's been a family favorite ever since. My picky eater just avoids the mushrooms.

Crock pot French dips, I take over sliced meat, a container of the au jusand a package of crusty buns along with a veggie pasta salad.

In the winter, I make a lot of homemade soups, a large container with a loaf of warm homemade bread (use bread machine) is always a hit.

Cheddar chicken pot pie - heavy, rich, but so good.

I almost always add fresh fruit cut up to any meal I give. And a homemade dessert.

Funny story, I took a meal to a friend going thru chemo. As an extra, I also brought a quart of homemade spaghetti sauce I'd made the day before in case she needed a quick meal for her kids since her husband traveled overnight frequently. She pulled it out of the fridge a few days later and warmed up a bowl thinking it was soup. Halfway thru the bowl she figured out it was sauce. Moral of the story, label everything, and include any cooking/reheating instructions.
 
According to my DB (who has been the recipient of such things more than I like to think about) the correct answer is always "things that freeze well."

I'm not homey nor crafty, so I always throw money at the problem and get a gift card to some place that delivers, is close to the recipient and/or has family style take out.
