Anyone in here decorate cakes?

AZ, I've never made a red velvet cake. It isn't very popular around here. I hear the easiest way is to add red food coloring to chocolate cake but that isn't a TRUE red velvet. Try searching Cake Central recipes for one that has a high star value and try that maybe. Recipezaar.com always has good recipes to try too.
 
Here are some doggie cupcakes I did for a Humane Society bake sale.

These are the best tasting cupcakes I've EVER made. They are literally melt in your mouth. All I did was take a Walmart cake mix, add a package of pudding, used melted butter instead of oil, eggs, and a 1/2 cup of sour cream. OMG I've eaten like 4.

I am making red velvet cupcakes for mother's day. I was told by my cake intructor that she uses the DH red velvet mix, and no one can tell it is from a box. She makes her own cream cheese icing, so maybe that is the trick.

I'm doing a purse cake tonight, not the carved kind, this one:

The pink one and I'm putting a gumpaste daisy on it instead of that flower. Someday I'll have to try doing a regular purse cake. This is for mother's day for my employees mom:)

Oh and just wanted to say that I brought my note cake to the Ice Cream Social and everyone loved it! so, that made me feel good, lets just hope orders come out of it!
 
For a red velvet cake, I would say cream cheese icing would be a good filling!

I will never, ever forget...when my sister got married, her color was red. Everything was red! And she really wanted a red velvet cake to match her theme and colors. Her request of the bakery was red velvet cake iced smooth with buttercream and fresh red roses in between each layer. When she came in to see her cake, it was covered in cornelli lace. She was about to have a fit, but the bakery people wouldn't do anything about it. Then, during the reception, as they cut into the cake, my sister's face fell. She looked up at me and said "this isn't red velvet". The cake was chocolate. I understand that red velvet is a form of chocolate cake (I think), but the color was definitely not red. She was ticked off. Her MOH called the bakery and told them that they had delivered the wrong cake. They asked what was wrong with it and she told them it was not a red velvet cake. The bakery told her, yes it was...MOH said no, it's chocolate. The bakery told her that's what a red velvet cake is! My sister let it go that day, but in the end, I think they ended up with a free wedding cake for that one...lol

Ok I'll use the DH mix then! I was hoping that would come up. None of the ratings did fabulous on Cake central and since i've never had one I didnt know what it should taste like so a mix is probably the best route.

OMG this has to be the cutest cupcakes I've ever seen!!! I hope the humane society sold them for $5 a piece!

I think I'll try a batch of cupcakes how you made them. You don't add any water??

I can barely even make a batch of boxed brownies:confused3 :rotfl2: ...and I am serious :upsidedow
 
I took the courses and love to make cakes...but really it's hard work for what most people will pay. I mean, you can go get a 1/2 sheet cake at the local grocer or Walmart that is really good for 25.00-30.00, maybe 50.00 for a dimensional one. You can even get Wedding Cakes at Sam's now. I've done them in the past, usually for a birthday cake that is pretty simple I'll get 20-25.00 and it cost me a few dollars to make, but hours upon hours to decorate. And for the last wedding cake I did, 100.00 was my price and it probably cost 30.00 to make and again...hours upon hours of work.

So anyhow...it's fun to make them for my kids and such, but I don't think I'll ever go in to the business of it. TOo much prep work, clean up and overall decorating time. Plus the health department has major rules about selling food out of your house...so to alter our house to meet their codes would be outrageous and we wouldn't recoup those cost for years.

I need a frosting recipe (or store bought, if you know of one) that dries firm enough to sandwich two cookies together with a popsicle stick in the middle. Any and all suggestions would be appreciated! I don't want to make 150 of these things to watch them fall apart!

Someone answered you earlier.

Store bought isn't going to be stiff enough or dry hard enough. You need to make royal icing. http://www.joyofbaking.com/RoyalIcing.html You have to be careful with royal tough as it's a tempermental icing that can go bad if not done right.
 
I'm so sorry I missed that reply! I have been:upsidedow with the end of the semester and wedding planning. thank you for pointing it out and replying! I will look that up. I used store bought before and it was too soft. Thanks again, and as always, beautiful cakes, ladies!
 
I made all the mom I know(my mom, MIL, grandparents...etc) jumbo red velvet cupcakes. They are stuffed with cheesecake and topped with creamcheese buttercream icing.
