Anyone have easy and fast dinner recipes??

There is 5 of us that will be going to WDW Nov2-Nov11 (me and hubby, ds8, dd1 and dd3). We will be staying in a house 5 min from Disney. We plan on eating a heavy breakfast and cooking dinner 4 of the nights. The other 4 nights we have reservations made. I need 4 very fast and easy dinner recipes. I would like something that is on the less messy side to eat. I have a 1 year old and 3 year old. I really dont want to be scrubbing the whole kitchen down after dinner lol. They are the messiest eaters I think I have ever seen (spaghetti is a definite no lol). Any help would be appreciated:)

How about quesadillas of some sort?
Buy the tortilla shells, some sort of cheese, precooked chicken cuts, and anything else you want in there. The only downside is that they take a little while to do a bunch in frying pans, but the little ones may like them just as well microwaved. At home two of our favorite combinations are to use Mexican cheese and black beans or mozzerella cheese, tomatoes, and asparagus.

If you're not doing breakfast buffets already, what about "breakfast for dinner"? [oops - just saw that you're already doing a big breakfast]

Frozen or Boboli pizza.

You could buy a precooked rotisserie chicken and use it for dinner one night and then the leftovers either in the quesadillas or with pasta and pesto sauce another night.
 
What about different salads... IE chef salad, that way the kids could eat a sandwich, or grilled chicken caesar. You could try burgers too. Maybe make small sliders.
 
OK, grab a pack of 3 boneless skinless chicken breasts and cut them into strips. Put them into a ziploc with some seasonings and freeze them. You can also store them in one of the Jack Daniels marinade bags. Toss them in the cooler then put in the freezer when you get there. Stick them in the fridge to thaw the day before you need them. When you get back and are ready for dinner, just pour them into the skillet and cook them until done, maybe 15-20 minutes. Pour some Bush's beans into another pan to heat and you have dinner. You can also just pour BBQ sauce on the chicken. Stuffing is another option or those flavored instant potatoes as a side. The marinade is a little messier to clean so I won't use it while we are in the camper (big mess in the grey tank) but you will be in a condo. This dinner is so quick and easy, even my dh can do it, and will. :banana:

One other think I have found is Bird's Eye Voila! skillet meals like skillet sensations. They cook up real quick, taste delicious and are not messy to clean up. I am surprised that something so easy and frozen tastes so good. They have the meat, pasta and veggies all together.

Are you shopping for groceries there? If so, Publix has great fried or rotisserie chicken, cooked there put prepackaged in their cooler in the deli section. You can just nuke it or put it in the oven to heat. They also have mac and cheese (already made in a plastic container- just DO NOT heat it in the container because it will melt) that my kids love. This is one of our quick meals at home since Publix is a mile from my house. We also grab a package of Hawaain rolls and a bagged salad to go along with it. Don't forget the salad dressing- there are even little individual foil packets of it in the deli usually.
Of course, this would need to be eaten a day or two after you buy it so the chicken would be fresh.
Btw, this meal came to mind because it is the one of the few meals my kids don't make a huge mess with. :rotfl:
Oh- wanted to add- great idea about the chicken strips, mamaloya. I'll have to try that on my upcoming trip in January!

Thank you everyone for your great ideas :) When we go to Florida we usually drive. So I like to make Lasagna, chili ect and freeze it. Then the dinners I made are the ice for the cooler for our road trip to WDW. So when we are in Florida I already have my dinners already made for the week. So this is a little different for me because we are flying this time. I am just the type of person that likes to do everything ahead of time. I just feel a little bit out of my comfort zone lol.

Princess Roo I think I will do a frozen pizza and probably a salad one night. Yea every morning we plan on eating a big beakfast.

deezeealum I love chicken caesar salad. That would be something good for me and my husband. My kids are not big salad eaters. But me and hubby are.

mamaloya I have never tried Bird's Eye Voila. I will have to give it a try. I am always looking for new easy foods that taste great :) That is a great idea with the chicken. It sounds to easy lol.

mama4 I think I am going to try gardengrocer to deliver our groceries. But it looks like I will have to find a publix lol. My kids love mac and cheese they can probably eat it everyday lol. You cant beat already cooked chicken. Yea I dont know how the kids really get so messy from a simple dinner. The food is in the hair all the way down to in between the toes :rotfl: And thats like not even everything that surronds them like walls and floors. You definetly know what I am talking about. Your 2 youngest kids are the same ages as my 2 youngest.
 
Not the healthiest of meals, but for vacation (and many days at home) I want fast, easy, quick, etc. Maybe a Prego (?) frozen lasagna from the grocery store...it can be cooked in the microwave or regular oven. Also, I think Tyson makes a nice breaded chicken patty (packaged in 4). You could make a nice chicken sandwhich or for the kiddies who are smaller, you can cut up the patty and serve it like a chicken nugget type meal with dipping sauce. My DS (2.5 LOVES it). Also maybe have sandwich night? I am just trying to think of really simple food that is no muss and much less fuss...good luck!

On our last trip down we at dinner at our Orange Lake resort almost evry nite- we had a stir fry noodle bowl ( kid friendly noodles, but no messy sauce), Quesadillas, BLT's, frozen pizza and I think tacos- but those are messy. Kraft Food and Family has lots of quick and easy ideas in the magazines and websites as well.
