Anyone have an easy recipe for Boneless chicken Breasts?

Here's my favorite:

1lb boneless chicken cutlets
1 stick butter
1 cup flavored breadcrumbs
3 T grated Parmesan cheese
1/2 cup dry white wine (apple juice can be used instead of wine)
1/4 cup chopped scallions
1/2 cup parsley

Mix breadcrumbs and parmesan. Melt butter in saucepan. Dip cutlets in butter, then in breadcrumbs. (save any extra butter) Place in baking dish and bake at 375 for 40 minutes (depending on thickness of the cutlets). While chicken is cooking, add the wine (or apple juice), scallions and parsley to the butter in the saucepan. When chicken is a golden color, pour butter mixture around and over chicken and return to oven for 3-5 minutes.

I usually serve this with baby red potatos and fresh green beans. So good!
 
I have a few...

I take mine and marinade in Zesty Italian dressing, then just saute in a pan and serve with rice.....

I also have my favorite and my comfort food.. put rice on the bottom of a baking dish, place chicken on top (seasoned with salt,pepper,garlic powder and lawery's (SP) seasoning) and then mix cream of mushroom and cream of celery soup and pour over the top and bake at 345 for 45 minutes... you can sub the cream of mushroom with cream of chicken or whatever cream soup you choose..
 
Slow Cooker Chicken Cordon Bleu

4 chicken breasts
4-8 slices of ham
4-8 slices of swiss cheese
1 can of cream of what-ever-you-have-on-hand soup
2 Tbs of milk

Pound chicken breast flat, top with ham and swiss cheese. Roll and place seam side down in your slow cooker, you can stack them, if needed. If desired, top with extra ham and swiss cheese. Whisk together cream of soup and milk in a bowl and pour over chicken. Cook for 3-4 hours and high or 6-7 on low. Makes a delish sauce - I thickened it w/ a tablespoon of cornstarch whisked into a bit of milk. Great on rice or mashed potatoes.
 
Put 4 - 6 boneless chicken breasts in a deep frying pan

Cover with one cup of ketchup and one can of diet coke

Bring ingredients to a quick boil and cover

Simmer covered for 10 minutes

Remove cover and stir frequently until barbecue sauce gets to correct thickness

Add hot sauce as desired.

Thats it.
 

I just used the McCormick Crusting blends tonight, the lemon garlic variety. http://www.mccormick.com/content.cfm?id=13265 I used olive oil then spread on the coating and baked in the oven...it was super easy and had loads of flavor. I served it with roasted red potatoes that I cooked in the oven at the same time as the chicken.
 
Hey question for U2 Rocks...... How do you make your garlic butter or herb butter? Are you using fresh raw garlic or cooked/roasted??? Also if you could write out rations-- how much garlic per how much butter? thanks!
 
Top the chicken with crushed garlic (as much or as little as you like), a couple thin slices or tomato and then completely cover with mozzarella cheese. Bake at 425 until chicken is cooked through and cheese is golden brown.

I usually try to pound out the breasts a bit before topping them just so they will cook a little faster.

This is my grandmother in-law's recipe. My husband and kids all love it!
Easy Chicken Casserole
Skinless boneless chik. breast @ 4 ( I also use chik. tenderloins, very tender)
Put chicken in casserole dish
sprinkle both sides with: salt, pepper, a little garlic & a little paprika
Mix below 3 in bowl than pour over chicken
1 Can Campbells golden mushroom soup
1 c. heavy or whipping cream
1 small can shrooms, drained
Sprinkle w/ parsley
Bake @ 350 for 1 hour.
Serve w/ rice or noodles.
 
CHICKEN WITH DRIED BEEF
6 deboned chicken breasts
1 pkg. dried beef
1 lg. carton sour cream
1 can cream of mushroom soup
Wrap a piece of dried beef around chicken breasts. Place in casserole dish. Mix carton of sour cream and can of cream of mushroom soup. Pour over chicken. Bake at 350 degrees for about 1 1/2 hours.
 
chicken breasts,
small bottle Italian dressing,
small container sour cream

Put chicken and dressing in crock pot. Cook on low for 5-6 hours, take chicken out, add container of sour cream to the crockpot making a sauce. Pour over chicken or shred chicken and mix in sauce.
 
I mix a cup of Mayo and shredded Parm. cheese together and put it on top of my skinless chix breast.Bake it in the oven on 350 degrees for 40 minutes.

Quickest Chicken (aka Italian Chicken)

Mine and DH's FAVORITE Chicken Dish/Meal
*Note - I always just use frozen chicken and chicken broth

4 pieces of chicken breast (frozen or thawed)
1 package dry Italian dressing mix
1 cup of warm water or chicken broth
Slow Cooker

Place chicken in slow cooker. Sprinkle with dressing mix. Pour water/chicken broth over chicken.

Cover. Cook on low 8 to 10 hours.

I then warm up a can of corn or green beans and then either make chicken flav. rice, chicken flav. noodles or chicken flav. stuffing and rolls for the sides. I cook enough for 4 people for this meal so this meal covers 2 dinners for DH and I.
 
Amazing Chicken

I mix garlic salt with light Miracle Whip, then paint it on the tops of the chicken breasts with a pastry brush, dip the top side only in bread crumbs - I like Italian with some extra parmesan cheese added. Bake at 350 until juices run clear.
