Here's my favorite:
1lb boneless chicken cutlets
1 stick butter
1 cup flavored breadcrumbs
3 T grated Parmesan cheese
1/2 cup dry white wine (apple juice can be used instead of wine)
1/4 cup chopped scallions
1/2 cup parsley
Mix breadcrumbs and parmesan. Melt butter in saucepan. Dip cutlets in butter, then in breadcrumbs. (save any extra butter) Place in baking dish and bake at 375 for 40 minutes (depending on thickness of the cutlets). While chicken is cooking, add the wine (or apple juice), scallions and parsley to the butter in the saucepan. When chicken is a golden color, pour butter mixture around and over chicken and return to oven for 3-5 minutes.
I usually serve this with baby red potatos and fresh green beans. So good!
