Anyone have a fabulous green bean or broccoli recipe??

I have been tasked with making the 'green' veg for Thanksgiving. My sons love the green beans at Chinese Restaurants, I have been looking for a recipe like that. The only one I know is the old casserole with cream of mushroom soup and canned fried onions.
 
I have been making the ones from pinterest. You salt and pepper them, mix with olive oil then bake. Yummy! Also, I just did green bean bundles this weekend and they were a hit. You wrap a few green beans with bacon. salt & pepper, then sprinkle with brown sugar. Bake until bacon is cooked. My crew cleaned the pan!
 
Thank you they sound great. I appreciate it. I'm trying to make a dish that will be delish and not boring. These fit the bill thanks.
 
We really like Paula Deen's Green Beans (I'm sure that's not their REAL name but that's what I call them :laughing:).

They're delicious!
 
I always make the same broccoli casserole for covered dish and special meals. It is an old recipe but everyone still asks for it.

Sauté 1 cup each of chopped celery and onion in butter. Add to this 2 boxes of cooked chopped broccoli, 1 can cream of chicken soup, 1 can of cream of mushroom soup, 1 small jar of cheese whiz. Heat until everything is all mixed together. Pour over casserole dish lined with cooked rice.

I know this is high fat but it is so good.

Broccoli with Garlic Butter and Cashews

INGREDIENTS:
1 1/2 pounds fresh broccoli, cut into bite
size pieces
1/3 cup butter
1 tablespoon brown sugar
3 tablespoons soy sauce
2 teaspoons white vinegar
1/4 teaspoon ground black pepper
2 cloves garlic, minced
1/3 cup chopped salted cashews
DIRECTIONS:
1. Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.
2. While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews, and pour the sauce over the broccoli. Serve immediately.

I also make a really good green bean recipe that is similar to the beans in chinese buffets... I cannot find the recipe, but I haven't used the recipe in years!
Boil green beans for about 4 minutes. Then stir fry with a little garlic for a few minutes.. then stir in a little soy sauce, a little brown sugar and a little peanut butter. So good. And easy.
 
My family loves this recipe for broccoli

4-5 boxes of frozen chopped broccoli
Velveeta cheese
2 sleeves of Ritz crackers
1 stick of butter.

Boil broccoli then drain really good.
Pour into an oven safe casserole pan.
Slice up velveeta and layer it on top of the broccoli.
Melt butter in microwave and crush up the crackers, mix crackers and butter together and pour on top of velvet.

Back on 350 for 20-25 minutes.
 
Broccoli with lemon and pine nuts!

Lightly coat the broccoli with some olive oil and sprinkle on some salt, pepper and if you want, some chili flakes. Throw in some sliced garlic and pine nuts and cover with lemon juice and some lemon zest. Bake at 400 degrees for about 15 minutes or until slightly soft. Sometimes I throw in some crushed bacon but I won't on Thanksgiving.
 
I cook my green beans for Christmas with bacon bits and chopped onions. I also highly recommend throwing in a bullion cube for added flavor.
 
This is really similar to the standard green bean casserole, but I think it's better because I don't like mushrooms or onions! It is just 1 can green beans, 1 can cream of potato soup, 5 slices cheese, top with cooked crumbled bacon. Bake till heated through. You would want to double it or more for a large group.
 
Our favorite are Golden Wax Bean.

Steam or Boil, don't overcook. Drain.

In a frying pan melt generous portion of butter, mix in plain bread crumbs (not Italian or with other seasonings added) ) and pen fry it until golden, mix with Wax Bean and serve.

I do a pretty basic broccoli casserole. A broccoli and rice casserole. Everybody seems to really like it. Even those who aren't big fans of Broccoli! when it is all together, it really seems to 'cut' that green broccoli taste.

1. Cook about one/half to one cup of rice, until done, depending on size of casserole.
2. Also steam/boil some fresh or quality frozen broccoli florets, just until tender crisp. (do NOT overcook broccoli... you don't want mushy broccoli soup!)

In a pan, heat and stir one can Cream of Mushroom soup.
Several slices of good American Cheese. ( I don't do processed cheez-whiz or velveeta!!!) Some may want it 'cheesier', and others may want it lighter. So, add the amount of cheese that you prefer.

When all three of the above are ready, carefully fold the rice and broccoli into the sauce.

Put a couple of slices of bread into your blender (just do a few chunks of bread at a time if you are using a regular blender, and not a food processor.) Zap just for a minute and you have fresh bread crumbs.

Place the casserole ingredients into a nice casserole dish, top evenly with bread crumbs. You can also drizzle the top of the bread crumbs with melted butter.

Then you just heat in a med-hot oven until bubbly and bread crumbs are golden brown.
 
I always use fresh Green Beans and Broccoli for these very simple but delicious recipes!

For Green Beans, I blanch them for about 5 minutes to get them nice and bright green. I then, in either OVOO or bacon grease, saute them with minced garlic then add Parmesan Reggiano cheese at the very end. You can also add bacon to it.

For Broccoli, I just cut them up in to nice size pieces. I toss them in OVOO, sea salt, cracked pepper and garlic powder. I spread them out on a cookie sheet and bake at 400 for 15 to 20 minutes - until they are tender and the tops start to blacken.

Roasted parmesan broccoli - I am making this right now!

Chop and blanch 1 head of broccoli. Or, if you are lazy like me, steam a bag of broccoli florets (plain).

Toss chopped broccoli with:
- a bit of olive oil (1-2 tbsp)
- 1 clove of garlic (or 1 tsp minced)
- some Italian breadcrumbs
- some shredded Parmesan cheese (obviously real shredded Parm is better, but you could use the powdered stuff in a pinch)
- salt and pepper to taste

Obviously adjust your amounts of the above ingredients based on your taste and the amount of broccoli you are fixing. It's pretty much impossible to mess up!

Bake at 425 for 15 mins.
 
We do a broccoli cheese rice casserole. It's one of the staples on our menu.
 
Wow some of these sound so good!!

I'm making a standard green bean casserole but I don't do it the standard way. I use cheese (sharp cheddar, the sharper the better) instead of milk and use fresh beans only. I do add a little milk for some liquid but the cheese melts down and makes it so good. I also use more French Fried Onions then the recipe asks for, I do use cream of mushroom soup as well. I've been thinking of adding fresh mushrooms this year but I'm not sure how the rest of the group would take that, they are slightly "traditional". lol But, they LOVE my green bean casserole!! :)
 
1 package (16 ounces) frozen French-style green beans
1 cup sliced fresh mushrooms
2 tablespoons butter
1 envelope ranch salad dressing mix
4 bacon strips, cooked and crumbled
Directions
In a large skillet, saute beans and mushrooms in butter. Sprinkle with dressing mix; toss to coat. Just before serving, sprinkle with bacon. Yield: 4-6 servings.
