Hi!
We charged a cruise deposit on 7/5 and the billing cycle closes on the 11th of every month, so my statements list 1/11 for when the deal expires. Does this mean I must pay it by 1/11, or do I have until 2/7 or 2/8, when my statement balance for that cycle closing on 1/11 will be due?
Thanks!

You must pay it off in full by the day the promotional offer ends in order to avoid interest charges. So this means on or before january eleventh in your case. When you think about it that would be six months after you made the deposit. Not february seventh or eighth which would be more than seven months later.
