I also am a big fan of crock pot cooking!!!

One of the easy things I make is chicken enchiladas.
In the crock I put~
frozen chicken breasts
1 jar of salsa (any kind is fine)
1 pkg of dry taco seasoning mix

Cook it all day~the chicken will flake apart when it's done......flake the chicken apart & wrap it in tortillas with a little bit of grated cheddar......put in a baking dish with a can of enchilada sauce poured over it....top it with cheese.....bake til cheese melts....YUM YUM YUM




I cheated today......I decided to try one of those frozen crock pot complete meals they just came out with......I bought the stroganoff one....I'll let you know how it was later on....

One of my families favorite crock pot recipes is mac and cheese......i don't make it much since it doesn't take all day...but here it is:

1 # macaroni (DONT PRECOOK)
1 brick sharp cheese, diced
1/2 brick velveeta cheese, diced
1/2 tsp dry mustard
1/2 stick of butter

layer the above ingredients in the crock pot....will make several layers. Then add enough milk to reach the top of the macaroni. Cook on low appx. 4 hours.

Actually, I got her one for Christmas and then she couldn't find any recipes she liked. I told her all of you were always trading them so that is why she started posting. Of course it took over 100 posts for her to get around to asking for them!
