Wow - do you know how hard it is to catch up on 12 pages at work?!;)

E - I told my DH to get me the DVD set for my b'day - hope he remembers. The theater where I saw Star Wars in '77 closed last week.:( That was the first movie that I saw 2x in a movie theater.

Gail - hope the sniffles go away.

Star - have a great time at the concert!

Have to go check and see if there is any cake left after LK took some.

Elaine - we're a bit disapointed that it's the remastered ones as well....but can't wait to get our surround sound rigged up in the new house to listen to it! We have copies of all 3 of the originals, and the remastered ones, and soon the DVDs!

Oh MP - you crockpot queen you.... (and NO editing this to say that I called her a crackpot queen! ;) ) Do you have any easy crockpot recipes using ground meat? You've already sent me the Taco Soup one. Thanks!
 

Apparently Luis doesn't wnat to sleep outside again tonight ;) He let me know that he did, indeed, get me the Widescreen DVD set!!! Such a sweetie he is!!!

Cami, honestly most of the "changes" didn't bother me... some of it I thought was pointless but only that one on the Return of the Jedi angered me. I need to get my hands on an original copy!!!!

As requested, some ground beef recipes:

Crockpot Enchiladas
1 lb ground beef
1 onion, chopped
1 green pepper, chopped
16 oz can kidney beans, rinsed and drained
16 oz can black beans, rinsed and drained
10 oz can Rotel tomatoes
1/3 c. water
1 t. chili powder
1/2 t. cumin
1/2 t. salt
1/4 t. pepper
2 c. cheese
flour tortillas

Brown beef with onion and peppers. Drain. Add beans, tomato and seasonings. Bring to boil. Simmer 10 minutes. Layer meat, tortilla and cheese (ending with cheese) in crockpot. Cook on low 5 - 7 hours. Warning: my family likes flour tortillas, but they can get a little gummy in a crockpot.

Crockpot Pizza
12 oz. pkg wide noodles
1 1/2 lbs. ground beef or turkey
1/4 c. chopped onion
28 oz jar spaghetti sauce
4 1/2 oz can sliced mushrooms, drained
1 1/2 t. Italian seasoning
3 1/2 oz. sliced pepperoni, halved
3 c. shredded mozzarella
3 c. shredded cheddar

Cook and drain noodles. Meanwhile, brown meat with onion and drain. Stir sauce into meat. Add mushrooms and seasoning. Spray cooker with Pam. Layer meat sauce, noodles, pepperoni, cheese. Repeat 2 additional times. Cover and cook on low 3 hours. Serves 6 - 8.

Crockpot Sloppy Joes (for a crowd)
2 1/2 - 3 lbs. ground beef
1 med. onion, chopped
1 green pepper, chopped
16 oz. tomaot sauce
1 t. chili powder
3/4 c. ketchup
1/4 t. pepper
1 T. Worchestershire sauce
1/4 t. garlic powder
buns

Brown beef in skillet and drain. Dump meat in crockpot and add all other ingredients. Cook on low 8 - 10 hours or high 3 - 4 hours. Makes between 12 and 20 sandwiches, depending on the size of the buns used.

Quick and Easy Spaghetti
1 1/2 lb. ground beef
2 onions, chopped
26 oz jar spaghetti sauce with mushrooms
1 can tomato soup
1 or 2 14.5 oz cans stewed tomatoes
1 can mushrooms
1/2 t. each: garlic powder, garlic salt, minced garlic, onion salt, and Italian seasoning
1 lb spaghetti, cooked

Brown beef and onion in skillet and drain. Add remaining ingredients, except spaghetti. Cover. Cook on low 4 hours. Serve over spaghetti. Serves 8 (Sauce freezes well)

Lazy Lasagne
1 lb. ground beef, browned
32 oz jar spaghetti sauce
8 oz bag curly edged noodles, cooked
16 oz carton cottage cheese
8 oz shredded mozzarella
Parmesan cheese, to taste

Combine beef and spaghetti sauce. Combine noodles with cottage cheese and mozzarella. Layer 1/3 beef followed by 1/2 the noodles in slow cooker. Repeat layers. End with beef. Sprinkle with Parmesan cheese. Cover and cook on low 3 to 4 hours. Serve with salad and garlic bread. Serves 6.

Lou, I can't believe you would think that of me. ;) You are too funny.

Actually, my oven was broken for a while. You learn make do when something like that happens. I got used to it and I like fixing dinner in the morning. It frees me up to be a taxi in the afternoon. :rolleyes:

MP - those look like very yummy recipes, but i have a very picky family. Shannon won't eat ground meat and DH would rather have a pizza half of the time.:rolleyes:

I only cook in the morning if I'm doing the crockpot. If I'm fixing a regular meal, I fix it when I get back from taking Amy to ballet, usually about 5:30 or later. And too often I realize I didn't take the meat out of the freezer. :rolleyes:

I had a friend who wouldn't eat ground beef. It made her sick to even think of it. She lived with us as an exchange student and my mom became a creative cook. Amazing how much we eat hamburgers in our culture. I lean towards fixing more chicken dishes. We ate a lot of chicken when I was growing up.
 
Afternoon Everyone,
Quiet day here, I'm still pretty wiped out from the weekend, and being sick, so I'm trying to get some extra rest.
Patrick came home sick from school today too....let's hope whatever we have is NOT making the rounds through my house AGAIN!!!!!

Add me to the list of people who LOVE crockpot cooking. It's so nice to have dinner ready AT dinnertime...and it makes the house smells so yummy too!
One of our new favorites in the crockpot is shepards pie.
