Back in September 2012 we had no difficulty making reservations at Makahiki or Ama Ama the day before. But that was then and things might be different today.
I think you'll have success getting a table at Ama Ama. A lot depends on how flexible you can be with times and dates. Also, smaller parties are easier to fit into the schedule than larger parties. We will be at Aulani beginning October 5, 2014, and I see that all the dates and times are still available, at least for a party of two.
Even though the online system shows no availability for your date, I suggest that you call the telephone number that appears on the online reservation page. Perhaps a CM could see more availability than what appears on the online site.

I would suggest going to AMA AMA when you arrive and seeing what they have available(don't go to the concierge--they can only see what is in the computer). I was just at Aulani last week and AMA AMA was booked, but they were taking walkins(with a wait of course). I was fortunate and made my reservations as far out as I could. Unfortunately, online booking only allows a certain number of reservations, but when you go to the restaurant you usually find that there is something available.
