I took my 11 week old with my not quite 3 year old without my husband in the summer - while recovering from a C section. (the grandparents, aunts and uncles did all come :> for his first trip)
The only thing I would do differently is book myself into a Villa with kitchen for the entire week rather than just 5 days (spent the weekends in the hotel room). It was easier to make the bottles ect. in the villa and spend time with my daughter.
But, all in all, it was a fun and more relaxing - not go go go type of trip.
BTW: just for laughs, I got dropped off at the Newark airport the morning of the trip by my hubby with the two kids. As soon as I got on the Delta(Song) line, they promptly informed me the flight wascancelled. Despite no bad weather and that I checked departure an hour earlier. I then had to get airport service to haul a** over to JFK with my infant, toddler, two car seats and luggage, b/c they had a flight leaving from there in two hours.
Remember, crap like that can happen and being with a baby does exacerbate the problem. I fly JETBLUE now.
