Alfredo Sauce Recipe

Mine is simple - and it has cream in it...

2 Tablespoons butter (i always use the salted kind :rolleyes:)
1 cup Fat Free Half & Half (makes me feel better ;) - any milk or cream is fine)
1/2 cup Grated Parmesan Cheese (the kind in the Green bottle like you sprinkle on pizza is fine - but their are better tasting versions in your fancy cheese section)
Salt and Pepper to taste

Melt the butter over medium heat. Stir in the Half and Half until combined. When the milk gets hot (don't boil it - simmer it > little bubbles will form around the edges of the pan) Whisk in the Grated Cheese a couple of tablespoons at a time - making sure its completely melted in before adding in the next couple of tablespoons (this keeps it smooth) When all the cheese is melted in - turn off heat, season with a pinch of salt and pepper, and toss with noodles. :goodvibes
 
Anyone have a good Alfredo sauce recipe?

I love the one at Olive Garden & Charlie Gitto's but can not stand the Ragu stuff so I would love to find a good recipe for my favorite dish :goodvibes

Olive Garden has the recipe available on their web site. The one thing I love about it is that you can refrigerate it and reheat it without it turning to oil like most others do. It may have something to do with the 6 egg yolks that Olive Garden uses.
