I think something to keep in mind is the new ships will almost always be doing the typical Bahamas, Castaway route since this is the most popular and accessible route for families with children. The smaller, older class ships have so many more sailing options including itineraries like Alaska, Panama Canal, Mediterranean, Northern Europe/Russia cruises where the larger class ships cannot fit in ports! These itineraries tend to pull in more adult only cruisers and less families with smaller children.
It makes sense from a business perspective that these new ships will cater highly towards family with kids (especially being a family dominated cruise line.) All this said, we dont have kids and cruise adults only, so I understand what you are saying. I think as time goes on and the fleet grows, there will be some reimagination of the older ships that might include increasing adults only areas for sailings that cater towards that demographic.
Also there seems to be a ton that hasn't been announced for the wish and computer renderings are not the most accurate. Only time will tell what these new ships will truly be like, but worst case scenario you have older ships that cater more towards adults only spaces!
