I think this looks GREAT. As far as your other two days, I guess I would change day 7 to either breakfast at Ohana's with Lilo and Stitch or see if you want to do the castle or trek over to Epcot and Akershus for Jasmine. BTW-Epcot is also on the monorail system, but you will have to change monorails, (which is not hard), and then once at Epcot, you will have to walk to Akershus which is in World Showcase, maybe equal to 2-3 blocks??? It will just take you longer in travel time, it's not really as inconvenient as the bus. So if they really want to see Jasmine, and you have the time that morning, the trip itself is not THAT bad, just will take time. Maybe 30-40 minutes. Depending on how fast you walk.
Day 8 - for the non-character day I would pick either Grand Floridian Cafe or Ohana's. Ohana's would be alot of fun and different as far as stuff for the kids to do. I think you'd enjoy it alot. If you just want to stay at the resort for the night and relax, then Grand Floridian Cafe would be excellent. It's got "chef prepared" type food, excellent service, lovely Victorian atmosphere and still maintains a casual dining atmosphere. Either would be great.
Day 9- I'd move Chef Mickey to this day. I don't think you can end the vacation any better than Chef Mickey. It's got a different atmoshere than any of the other character meals in that it's a celebration type mood with singing and napkin waving. Lots of fun. IMO, a GREAT way to "get you in the Disney mood" when you arrive, or "say good-bye"
to a Disney vacation. I've done it both ways and in between!!!
