Adding park days?

Can you still add park days to your ticket when you are at the park? We are going in August and plan on spending 7 days at WDW for sure with 3 days at Sea World/Aquatica/Discovery Cove. The problem is the Sea World parks close earlier (5:30-7:00) and I am worried that we will get back to our room and wish we could go to the parks for a few hours. But I am not sure I want to plan to go to Disney after a day at Sea World because we might be exhausted. Can we add days when we get there? Do we just pay the difference between our ticket prices (i.e. the extra $10 odd dollars between a 7 day hopper and an 8 day)? Thank you!
