Thanks, so it's book the whole package (room, passes, and DDP) or no DDP...
That makes that easy then...I guess it's no dining plan for us. We're booking the room with credit card points and buying one pass a month in advance to spread out the payments.

Exactly. If you don't fit one of the exceptions (DVC on points, annual passholder, military discounted room) you must purchase at least a one-day ticket as part of a package reservation to be able to add a dining plan.
You can, however, purchase ONLY a one-day ticket for each party member on the package and buy tickets for the rest of your stay elsewhere.
I had the same question, I asked the CM on the phone and was told if you call atleast 72 hours beore your arrival date, you can add a package(tickets and dining) onto a "room only" reservation. Hoping to come up with the extra $ to get the Dining Plan
If you think you might want the DDP, you could probably buy Disney gift cards in the same way you are buying passes now and then use them to pay for your package.
