hi everyone,
On our last cruise, which was my first ever, I was grateful to have friends with us who have sailed with Disney many times before and knew the ins and outs. This time, my husband and I are taking his mom so she will be looking to us for expertise. Yikes! I would like to arrange for all of us to take cocktail making class and wine tasting class, but I have no idea how to book this! Does anyone know if there is a list of activities online? Can it be booked ahead? Or can you only do it on the ship? Thanks!

Unfortunately, the wine tastings and other mixology offerings cannot be booked in advance. My recommendation is to go to Guest Services immediately upon boarding to learn when they will be held and to sign up - some book up quickly. I know during 7 night (or longer) cruises, some of the classes are held multiple times. I'm not sure about the shorter cruises, but I'm sure someone on these boards will have more info on those.
 
When you get to the terminal at check in, you will receive a navigator (be sure to get one and read it). The navigator will provide you with information as to where to signup for the classes. Do not assume that it will be guest services.

I've looked at the navigators and they don't seem to give the times (I have found times on the navigator for that day, but not the initial one.). True? Or did I just miss it?

check under the heading ADULT ACTIVITY HIGHLIGHTS. There should be info on Beverage Seminars with the times, if there are any offered the first day.
 
Wherever the booking location is (on our Fantasy cruise, it was in the bar area) there will be a complete schedule of which tastings are on which days and at what times. The navigator will just tell you where to go to book and when you are able to book.
 
The first day Navigator will not have the times for all of the seminars. You will have to go to where they say for signups and they will have the list for all of the classes during that cruise.

Sometimes folks on your Disboard cruise thread will arrange for a private tasting with your group. We joined the wine tasting group on last year's WBPC cruise, and it was fun being with people you knew.
 
If for some reason you don't signup the first night, check with guest services after. For sailings with few at-sea days, the sessions fill up quickly, on a TA cruise, you may be able to join at the last minute. One note, you asked about setting up a class, Disney will provide this service if setup in advance and the minimum number of folks is usually 20 - 25. As another poster mentioned, if you are part of the meetup group, see if you can join there.
 
Last year we signed up at Ooh La La's. That is the first thing we did after boarding. The classes seem to fill up fast.

On our 12-day Med cruise, we boarded a little after noon, went to Guest Services and booked two different tastings. We'd have done more, but some of the times conflicted with other things and some we'd done before (although that doesn't always stop us from doing them again). I believe that they offered (sometimes more than one of each): cognac, whiskey, wine, tequila, mixology, martini, beer, and rum. Even though the whiskey tasting was sold out, there were two spots set up which no one showed up for. Sometimes, if you show up at the time, they may wait to see if everyone shows up or can sometimes add additional people. For the mixology one, two people didn't show up so they sold those spots to someone else and added one more (three people came together). No guarantees but it's possible
 
Your Navigator will, as said before, tell you where to go to sign up. There will be a complete menu of the different classes there. When I signed up on a non-Concierge cruise it was at La Piazza (In Concierge they will do it for you) and there was a little sandwich board with the complete list.
 
We purchased our Mixology tickets at Guest Services the first day. We ended up doing two different Mixology classes since we enjoyed the first one so much. We purchased tickets for a beer tasting at the bar, 687, when we happened to walk in 30 minutes before it started. Guest services was able to pull up the various tastings when we purchased the 2nd round of Mixology tickets so we could see what was still available for purchase rather than walking from bar to bar.

I'm particularly interested in a beer tasting and the wine and chocolate tasting, are these 2 offered on all 7 day fantasy sailings?

Why would you go from bar to bar? The first day the Navigator will list the ONE bar where they are selling the tickets for the classes and that location will have a list of all the times the classes will be offered.

FWIW, the beer tasting isn't all that. Its all ABInBev
 
I may be the only one, but the chocolate tasting was my least favorite. It was too oily tasting for me.
