Thinking of booking a transatlantic for just me and the husband, what activities are available when you are at sea for 6 days straight??

Pretty much the same activities that are available on all other cruises (trivia/bingo/tasting and cooking classes/movies/etc). You can look at past Navigators here: http://disneycruiselineblog.com/personal-navigators/ to get an idea of what sorts of activities have been available in the past.
 
On my Transatlantic in 2015 there were some fun open-house (and some adults-only) activities in the Kids' areas throughout the cruise, including interactive science experiments, chocolate-chip-cookie-making, and Avengers Academy. There were 3-4 ship-wide photo scavenger hunts. And there's something happening in the WD Theater every night, whether it's the theatre/musical shows, musicians, ventriloquists, or comedians. Sadly, I only made it to one of the cooking demonstrations, but I'd go to more next time. Free food! (I mean the whole cruise is free food, but...) ;)
 
We are going on our third Transatlantic this May and have our fourth booked for next year. We love the longer cruises and the sea days go by much to fast. Typically the group will get pretty active making plans to group tasting, Palo, running ect.
 

In addition to what the others have stated, on the 2015 EBTA Disney had the historian who worked with Diane Disney Miller on the Disney Family Museum on board to do several lectures. I don't remember his name but I thoroughly enjoyed the lectures. Also, Don "Ducky" Williams, Disney's main character artist, was on board to lecture and give away original sketches. He was also great to listen to...
So lots to do on sea days if you want to be active.
 
Our ebta last May had an historian/character artist that did several presentations, the original "Belle" from broadway, the director and team (choreographer, composer, writers, set designer, lighting designer) on board finishing the changes to "twice charmed". They did a round table q&a. There were dance lessons also each day. So many things that even with our 9 sea days, I think I could have done them all again just to experience things I missed the first time!

The Panama canal and transatlantic cruises tend to have similar programming except when weather precludes pool deck activities

That's good to know. I ended up on DCL because I wanted to do an actual transit of the canal and it was cheaper than Princess. It was the longest cruise I'd ever been on and I was thoroughly entertained throughout the cruise. I'm hopeful for the same on the transatlantic.
 
Thanks for the info....also wondering when the Sept 2018 WBTA dates will be posted or if they're changing it. That's the one I'm interested in.
