If we book a vacation, with dining option, through WDW's website for 8 nights, but only purchase 6 day parkhoppers, would we still get all 8 days of the dining?

If we decide to go this route, I'm going to have to do some big-time researching on this site cause we've never stayed on property so we've never had to worry about ADRs.

You'll get 8 nights of dining. It's equal to your hotel stay, not your park passes.

If you're doing a package, it's only a few dollars more for 8 nights instead of 6 nights. Especially if you are hopping, I would spend a few more dollars and get the full 8 days.

It's $4.26 more for the 8 day hopper over the 6 day.
