As promised in chat, here is my mushroom risotto recipe. Serve 4 as a main with extra veges on the side.

In a really large fry pan or saucepan, dice some onion (we use a large red one) in fry in oil with some chopped garlic. Add 2 cups of Arborrio rice (it has to be arborrio so don't try to sub it with another type) and stir it around the pan for about 2 minutes.

Add some stock - about a cup - I usually prepare about 1 litre (about 4 cups) and stir until absorbed. Stir in mushrooms - whichever type you like, brown, field and pretty much as many as you like - more is better.

Keep stiring and adding more stock slowly until absorbed, then add more. Keep doing this for about 30 minutes until the rice is cooked.

Serve with grated cheese on top if desired and extra veges on the side.

This recipe is really easy to adapt to whatever veges/meat you have on hand. Also reheats really well for lunches.

I had a late night run last night as Angelina didn't get done work until 11:15, got home at 11:30 and I crawled into bed around midnight..........:eek:

We're almost there. MIL & FIL have the kids and I think we have officially entered the DC metro area - Hargerstown, MD. We are not off to a great start. We've been compleltely across the country and this is the first time we've had a problem finding a hotel that will allow the dog. We must have called 20 different places last night. I hope this gets better because we aren't terribly impressed with the area. The term "5th circle of hell" was muttered in the car last night...

We were able to get a cheap place near Disney for 8/22 to 8/26...

Air isn't too bad....We always eat cheap..

The worst will be the dog sitter for four days.

I don't really have many WDW T-shirts - DS has a few, but he wears them until they fall apart! Of course, there is also that I can't sew worth a darn :rotfl2: . I can sew on a button if I must and I managed to get DS's badges on his boyscout shirt (although I had bloody fingers doing it!) but that is about the extent of my abilities.

DH sewed patches onto his leader uniform and both the boys. He refused to do mine, so I paid someone to do it!

This could be done with any kind of t-shirt:

I love mushroom risotto. I love seafood risotto. I love plain risotto. Heck someone could offer me Old Shoe Risotto and I would probably love it!

We're doing just fine, no problems here at all as far as we care concerned. All the smoke and soot from the fire went to the northeast of the tank farm, we live southwest of the tank farm so we didn't have any ill effects from the fire, except for all the fire trucks racing by our house the other night, and the NBC10 helicopter flying over our house...........:rolleyes1

What a relief. I was at the Y the other day & the 4 o'clock news was showing someone's pool with globs of black stuff on the bottom. Aparently some neighborhoods had soot all over the place.
