6 yr old mexican fiesta Birthday Menu ideas?

I thought I would ask you all about some ideas to add to our taco bar for my dd's birthday, we got the regular chips salsa stuff any other ideas? Looking for sides and things.

My almost 5 year old loves to eat chili with his nacho chips. He also loves scooping up the Mexican or Spanish rice with them. We also always have homemade sopapia chips as a dessert. You just take flour tortillas and squirt them with water and sprinkle them with cinnamon and sugar and bake them until your desired crispness. You can also fry them and then roll them in the sugar mixture, but we don't fry much at our house.
 
Dirty rice and refried beans?

I do mexican chicken in the crockpot - chicken breasts (or your choice) a jar of salsa and a packet of Taco seasoning. Yummy!

What about queso? Kids love cheese!
 
We do the baked cinnamon chips too but you can make a fresh fruit salsa to dip them in. Just chop up fresh fruits you like. It's so good! You could do the "fried" ice cream for dessert too.

I'd do a mexican cornbread too.
 

Those are little kids so I think the salsa chips, a taco set up (lettuce, cheese, sour cream, olives meat) along with some rice is enough.
The set up/look will be the real impact IMHO....be sure to use lots of Brite reds etc...maybe even consider portioning out the rice in cupcake papers so they can get "just enough" and you don't waste it.......those cinnamon chips will go over big too....you could also consider vanilla ice cream with a drop of coconut (and for you and hubby after the all the work, throw a splash of Kahlua over that ice cream :lmao:) YUMMY! (OH, you can do the ice cream ahead in those same paper cupcake thingys and throw it in freezer with some saran and you'll be ready to go....so simple...maybe a little bowl of sprinkles for the kids to add on??

Great ideas everyone thanks! I love the idea of preportioning! I got some really great stuff at the dollar tree all fiesta stuff cactus glasses, sombrero hats and some great plates and bowls that look very festive and they are ceramic too so I can reuse:)
 
You can make real taquitos:

Put the tortillas in a plastic bag and warm them in a microwave aroud 40 seconds.
When soft, put inside meat,or chicken,ormonterrey cheese ,or pork or smash beans (in the blender) closed them tight.
Put a lot of oil on a pan, and heat it, when really hot, throw the taquitos into the oil for 1 min or so. Put them on a napkin so they will drip the excess fat. searve with guacamole.

TOSTADAS

Put 2 tortillas per person overnight outside the refigerator. Next day, they will be hard, put them on the oven for about 10 min until brown (dont burn them), when cold, put fried beans (again from the blender) on top, then chicken, cream and garnish with cheese.:love:
 
With little kids they really do not care about the food. They will however love the dishes etc. Be sure to have some simple soft shells and chesse for those picky eaters and you will be set!

Focus more on the fun, a pinata for sure. GAmes, art activity??
 
Soft shells are not mexican...but anyways, they are 6 years old, they will not know...;) just get a wonderfull cake.:)
 
I am lamenting the demise of your carpet....six year olds and a taco/nacho bar! LOL! :rotfl2:
