When we travel to WDW next time with my parents there is a possibility that one night they'll drive over to Tampa to visit a friend for dinner rather than eat dinner with us. Their friend has been ill so they won't know which night (if any) until that week depending on friend's treatment schedule, etc. I really like to have all my ADRs lined up well before we travel - in fact I'd be a wreck if I didn't. Now, if I make all my ADRs for a party of 8 but one night my parents aren't with us and only 6 of us arrive for an ADR that was booked as a party of 8 will we have a problem?

No, it will not be a problem. We often travel to WDW with friends or family. Usually one night someone is not up to dinner for whatever reason and we show up with less than our regular ADR and we have never encountered a problem.

No. We had a dinner ADR for our group of 8 at Crystal Palace on Mother's Day.
Only 6 of us showed up....no problem.

The only time it would be a problem would be if they didn't show up for a dinner that was guaranteed on a credit card, such as CRT or one of the dinner shows. For those, when you make the ADR they will ask for your credit card number to guarantee the reservation, and give you a time frame for cancellation (usually 24 or 48 hours prior to the reservation). If someone does not cancel within the time frame and is a no-show, the credit card will be charged. Other than that, it should not be a problem.
