39 days until my first trip in over 10 years

I was married and my kids were 16 and 9 the last time I was at WDW. In 39 days I am going back to WDW without my "kids" and with my "new" boyfriend... I'm so excited for an adults trip and super excited to share my love of Disney with Tom (we've been together for just over a year). So much has changed and so much is NEW! We are staying at POR and I have made some ADR's but what would YOU suggest are the must do's and must see's??
 
The Flower and Garden Festival will be going on at Epcot, including the weekend concerts with classic acts from the 60s-80s.
 
How exciting! You will have a wonderful time, and POR is a great place to stay. Your question is very big and it would take a book to answer it completely, so let me just make a few comments. Epcot will be a great spot during your adults only trip. Flower and Garden will be going on with its food kiosks, concerts, and pretty displays. I would spend a little extra time here taking it all in. I also enjoy taking advantage of the boat to Disney Springs (Downtown Disney) from POR. We love to eat a Raglan Road and enjoy the music and dancing along with the good food. Let yourself be a kid again at Magic Kingdom: meet characters, ride old favorites, check out the new Fantasyland including enchanted Tales with Belle if only to check out the amazing detail and theming, have a Dole Whip, and enjoy the new afternoon parade. At Animal Kingdom enjoy the shows and don't skip the Nemo musical thinking it is a kid's puppet show. It is a fabulous show! I'll leave the rest for others to comment on, but I hope you have a great trip!
 
The new Fantasyland is fantastic!! Be our guest is beautiful...and delicious! It's fun to stop for a cinnamon roll at Gaston's Tavern. The little mermaid ride is awesome!
Memory maker is a great new addition... You get the best pictures.. Magic shots, ride pics and videos!! Have a magical trip! :)
 

OP: have a great time. I just went last year for the first time in 3 years. Felt like I missed a lot. I enjoyed the F&G Festival. We are going back the 2nd week of May this year.
