25th Anniversary/graduation trip WDW

I am planning a trip to WDW for July. This trip is a combination 25th anniversary and high school graduation celebration. As of right now we are planning on staying at Coronado Springs and visiting each of the 4 parks. I would like to do something special while we are there without spending a whole lot of money. Any suggestions? I will be traveling with a 17 year old and a 15 year old and of course my husband. :). We would possibly like to do a character meal - is breakfast a better bet for this?

we like character meals for breakfast and dinner. We've done Chef Mickeys and Ohana for breakfast. Ohana was quieter but chef Mickeys has more variety being a buffet. Ohana has lilo stitch mickey and pluto and chef mickey has mickey pluto donald and I think I remember minnie. We've done crystal palace, 1900 park fare, garden grill, CRT, for dinner. I'm not a fan of crystal palace it has pooh characters and the food for me was average but next trip we will go back since we have a pooh lover coming. I loved the character at 1900 parkfare(my bday dinner). It was Cinderella prince charming and the step family. The salmon was awesome and I don't eat Salmon. I think we all agree to go back again. CRT it was nice to do it once but not needed each trip definitely could be that special moment. A later evening dinner there for my sons bday and it was nice. How often do you get to go in the castle. Never unless you eat there! I warned everyone we were going for the experience and not the food and we were all pleasantly surprised. All the princesses make the rounds, snow white was the fairest of them all. Garden grill in Epcot was a family style sitdown with mickey chip dale and pluto we loved the fresh salad the most but everyone really liked the food but is more causal. I like going to a dinner better than breakfast becuase I like to head right to the park so my vote is dinner. I've had a great day and want a break by dinner.

Of course to save money breakfast is always cheaper than dinner anywhere. We try to make things special as well. I think next trip to do something special we may try the afternoon tea at the grandfloridian- my mom loves afternoon tea or a tour. If I were to do a tour it would either be a behind the seeds tour since my dad likes gardening followed by dinner at the garden grill or a tour at the MK I forget what it's called but it is for all ages and is in the morning I think 930/10 and you meet on mainstreet. I think those have been the most reasonable things that would be new to us and would have some interest by someone in our party.

Also my parent's have been wanting to do a carriage ride at POR I believe about $40 for 1/2 hour ride around the premises. They do sell less expensive bottles of sparkling wines at POR too in the gift shop so maybe also at Coronado as well to celebrate your anniversary.
