This is one of my DH favorite recipes right now:

Enchilada's

1 lb ground beef
1/2 onion (optional)
2 Tbs. taco seasoning
1 can Spanish rice
1 can enchilada sauce
velvetta
shredded cheddar cheese
6-8 tortilla shells

Brown beef and onion in skillet until no longer pink. Drain. Return to skillet and add taco seasoning and Spanish rice. Cook until creamy. Spray 9x13 pan with Pam. Take a tortilla shell and add a few small slices of velvetta (I make one swipe off the cheese and cut into strips.) Add meat mixture. Wrap and place seam side down in the pan. Repeat until pan is full. Cook in 350 oven for 10 minutes. Add enchilada sauce over the top and return to oven for 10 minutes. Top with shredded cheese and return to oven until melted.

Another of my DH favorites:
Easy Lasagne

1 pound ground beef
1-12oz carton cottage cheese
1 jar spaghetti sauce
lasagne noodles
2 cups mozzarella cheese

Brown beef until no longer pink. Drain. Add spaghetti sauce and cook until boiling. Boil for 2 minutes. Add enough to coat bottom of a 9x13 pan. Add a layer of noodles. Top with 1/2 cottage cheese. Layer meat, noodles, cottage cheese. Top with remaining meat. Cover with mozzarella cheese. Cover with foil and bake for 45-60 minutes in a 350 degree oven.

ENJOY! :Pinkbounc
