If I buy 1 day passes today, can I upgrade them to 2 day passes later (but still before the 60 day FP+ window)? Or can I only upgrade them once I get to the resort?

You CAN upgrade.

If the ticket is part of a WDW resort package (bought along with reservations to a WDW resort stay,) the ticket can be upgraded at any time.

If the ticket is NOT part of a WDW resort package (bought separately from a WDW resort stay,) the ticket cannot be upgraded until arrival at WDW.

If you are just buying tickets, and not a package, then they can't be upgraded until you arrive at WDW.

I'm not sure of your exact scenario. But I was in a similar situation recently. The cost to add a second day is almost full price. I just decided to buy a second one-day ticket for FP+ purposes.

Absolutely true.
That's the unique thing about the relationship of one-day and two-day tickets.

The thing that can make a BIG difference is if you want to buy the Park Hopper option.
It's a one-price thing for a two-day ticket, but the hopper will cost twice as much if you add it to two one-day tickets.

Can I tag onto this? We have 3-day tickets but want to wait until we arrive to decide whether to go to the park that first arrival day (which would mean four days in the parks). Is there any particular way we need to go about doing this? Our scenario is this: if its gorgeous out (pool weather) and/or our arrival is delayed somehow we will stick with our 3 days and hang out at AKL our first day; if we arrive on time and the weather is too cold for the pool, we want to go to AK when we arrive (flight lands at 9:30 so ll:00?).

Use your current tickets to go into the first park.
Any time after that, go to any Guest Relations (inside or outside any park) or any ticket booth and do the upgrade.
When you do the above, the added one day will cost $30, per ticket (plus tax.)

Have fun!
