Your favourite recipes for a picnic

Hello
I'm hosting a luau themed picnic on Saturday.
I have the roasted pig coming from the local Filipino butcher (so much easier to have it done for me!! and really, I live in Vancouver -where could I dig a pit? :rotfl: ) but I'm looking for other dishes I could serve alongside it. It's at a local park -not in my yard- so things that would normally be served straight from the oven won't work and the dishes could be out for quite a while so of course, we can't have anything with mayonnaise.
What are your favourite things to serve to a big group?

Why not just serve regular picnic food and keep it warm with sterno or cold with ice? I make baked beans, macaroni and cheese, sausage and peppers, etc. ahead of time and just put them in the pans with sterno underneath. You can do the same thing with potato salad, coleslaw, etc. but just put ice in the large pan and sit the pans of food on top. It works beautifully!
 
Just posted an Antipasto Pasta Salad on the "Pot Luck" thread - has a balsamic vinaigrette dressing instead of mayo based one...
