Our favorite, aside from just sandwiches, is turkey pot pie. What is everyone else making with leftovers this year?

I make turkey sandwiches. Take a leftover roll, spread sweet potatoes on one side and cranberry sauce/relish on the other. Add a thick slick of turkey and top with some stuffing.

Voila! Turkey dinner on a roll.

Our turkey leftover sandwich of choice is turkey, green chile, swiss cheese on sourdough, and of course grilled.

Green chile turkey soup will be on the menu on the Sunday after, and the second round...leftover soup...we'll add a hunk of velveeta type cheese for a cheesy green chile turkey soup.

I make soup with turkey, green beans, carrots, celery, onion, garlic and spices. When it's just about done I add Ditalini pasta and grated parmesan cheese.

Also, sandwiches are the best.

Omelettes. I put warmed leftover turkey in the middle with cheese, onion, and sometimes mushrooms, depending on what I have on hand.

Turkey Cobb sandwiches, turkey soup, turkey wraps with some hummus and I remember my grandma used to shred some cooked turkey and mix it with stuffing before warming it on the stove. It sounds weird but it was really good. I would like to make a turkey tacos with some salsa verde, queso and a little bit of avocado

We had Thanksgiving a month ago so we had hot turkey casserole. We also had creamed turkey on toast. Those are our go to leftovers. I still have the turkey bones in my fridge that I may end up cooking tomorrow. I have been so sick the last 2 weeks and could have used the turkey broth.

I make turkey pot pie soup. It's so good my friend's grandma's recipe. It's like a turkey vege soup but instead of noodles or dumpling you use pie crust cut into noodle sizes and cooked in the soup.

In my family, other than sandwiches (yum), we cut up the turkey meat, mix it with leftover stuffing (often make extra for this), pour gravy over it all and bake it in the oven. Sort of a casserole. A crazy, loved tradition!

tigercat, here you go...

Country Turkey Casserole

2 cans Turkey Noodle Soup (may use chicken noodle)
2 Cups Milk
8 ounces Uncooked Elbow Macaroni
2 - 3 Cups Chopped Leftover Turkey
1 Cup Shredded American Cheese (or your favorite)
1 Small Onion, chopped
1 teaspoon Seasoned Salt
1/2 Cup Grated Parmesan Cheese

Blend soup and milk until smooth in a 2 1/2 qt baking dish. Stir in macaroni, turkey, cheese, onion and salt; cover.

Bake in 350 degree oven 1 hour and 25 minutes; uncover. Sprinkle with parmesan cheese. Bake 5 minutes longer or until cheese is crusty-brown.
