Your best leftover turkey dish

Gumbo, of course. :thumbsup2

Once you make the roux you can do the rest of it in a crockpot. I put mine on as we are doing the dishes after dinner; the carcass gets stripped and immediately put into a stockpot to make the broth.

The best sausage to use with turkey in gumbo is a good lean andouille; get it from a decent butcher shop.

Thanks Saphire. It looks good. I think I would have to change some things though as I can't have any wheat. I was wondering about using some fresh turkey broth and then I would use spelt pasta. I think it would work with just a few changes. I am making turkey broth today.

With leftover chicken and turkey, though I think works better with chicken.

Can of mushroom soup, can of peas and a lttle butter.

Serve over pasta or rice.
 

LOVE me a Pilgrim Sandwich:

Turkey, stuffing, cranberry and mayo. Any kind of bread. Ramekin of hot gravy to dip it in, deeeeeeelicious!!!!!!!!!!!!!!
 
Oh! And my new favorite! Turkey, Brie, Arugula, cranberry and mayo in a wrap or on a good crusty roll.
 
Gumbo!!

Make a roux and add smoked sausage with the carcass and seasoning in a Rollin boil until the meat falls off the bones. Serve with rice!

So many great sounding ideas on this thread! I think I'll run out of turkey before I run out of new ways to use it this year.

:thumbsup2 Sandwiches need cranberry sauce on them.

For the pot pie:

Pillsbury Crust (the recipe has you make it from scratch, but I don't mess with it)

1 T butter
1 large onion, finely chopped
1 t dried thyme
1 1/2 cups whipping cream
1/2 cup chicken broth
2 T flour
2 T cornstarch
1 1/2 t paprika
1 cup frozen sliced carrots
1 cup frozen peas
4 cups cooked turkey, shredded

Preheat oven to 400. In a large skillet, melt butter over medium heat; add onion and thyme. Saute for 5 minutes.

Whisk together cream, broth, flour, cornstarch and paprika; add to onion mixture. Whisk until thick.

Add carrots, peas and chick to cream mixture; mix well. Pour into 9" deep dish pie pan (often I'll use a bottom crust, too, and other veggies instead).

Place dough on top of filling; trim excess dough. Flute edges of pie. I brush with beaten egg.

Bake until filling is bubbly and crust is browned - about 30 minutes.
 
We had Thanksgiving a month ago so we had hot turkey casserole. We also had creamed turkey on toast. Those are our go to leftovers. I still have the turkey bones in my fridge that I may end up cooking tomorrow. I have been so sick the last 2 weeks and could have used the turkey broth.

How do you make your casserole and creamed turkey on toast? Those both sound good. Also, someone mentioned Turkey green chile stew, that is another one I am going to have to try. I love tettrazini but haven't made it in a few years. Why did I stop making that?

I love leftover chicken because it's such an easy substitute for chicken.

We normally make Chicken and sour cream enchiladas, Gobblers pie (like shepherds pie but with turkey) and a white lasagna with mushrooms.

I once made "Sunday after Thanksgiving omelettes" with turkey, stuffing, mashed potatoes and gravy. They were AWE SOME!
 
I don't have a dish, but I loves me a turkey sandwich the next day.

2 pieces of white bread, lightly toasted
left over turkey breast
bacon (crispy)
Mayo (NOT miracle whip :crazy2:)
lettuce
tomato (sometimes)

YUMM, YUMM, YUMM!
 
The creamed turkey is easy. You make a bechamel sauce but I use turkey broth for the milk.
2 T butter melted in microwave
add 2T flour. Whisk put back in microwave for a short time.
Add 1 cup turkey broth that had been heated before the butter for 2 minutes
Microwave whisking every minute until it is thickened.
Add cut up turkey.

Hot turkey
3 cups diced cooked turkey
1/2-1 cup diced celery
1/4 cup toasted slivered almonds
2 tsp chopped onions
1 T lemon juice
1/2-2/3 cup mayo
mix together and add salt and pepper if wanted
Place in a 5 cup casserole dish
Sprinkle with cheese and top with crushed potato chips.
Bake at 375 oven for 25 minutes.

I will add a lot more almonds usually because my family really likes them. I also will add more onions as well.
I use chedder cheese for the top and make sure the top is covered with the chips. It makes a nice crisp crust.
I usually double or triple this receipy as it is great as left overs.

Layer a pie crust with:
Stuffing
Gravy
Turkey (cubed)
Gravy
Mixed vegetables or mix of leftover vegetables or combo of both
Gravy
Place pie crust on top and make 6 slits

Bake at 350 for 45mins-1hour

This sounds simple and easy. Do you use the refrigerated Pillsbury pie crusts?
 
Okay after thanksgiving we will do a few make shift sandwiches but mostly we have a favorite and that's where all or leftovers go.

We take a little of everything stick it on a plate and put it in the microwave and then eat it.

That's as close to leftovers as we get.;)

I've never had enough of anything to make soup or pot pie or casseroles anything because my family doens't want to do anything but reheat and eat.

We actually do a full thanksgiving (turkey and ham, stuffing and real mashed potatoes/gravy etc) about 3-4 times a year. Every holiday is done with that menu. We love the basics and that's what we like to make for special ocassions.
