Yachtsman aside for a second, to me, there is no comparison between FF and bluezoo. We've eaten at FF several times and the seafood has always been OK, but not great - scallops were burned, potato-wrapped snapper was dull. At bluezoo, everything was fresh, ingredients were top-quality, and the preparation was interesting and inventive.
IMHO, Flying Fish is closer to the quality of a chain seafood place, whereas bluezoo is on a par with the high-end restaurants we enjoy in L.A., like Water Grill and Jar.
Throwing Yachtsman into the mix is tough because it is also excellent.... We always split the Porterhouse, and the scallop appetizer there is far better than the scallops at FF or Narcoosee's. Yachtsman also stands up to Shula's in my book, which I didn't expect at all before I'd tried Shula's.
But there's a wider range of seafood at bluezoo, so maybe that would help with your decision.
