Does anyone have the recipe for the Gratin Potatoes at the Yachtsman Steakhouse? They are the ones that are made with Asiago cheese. While we weren't all that impressed with the rest of our meal there, we could have eaten several more helpings of those potatoes!! I would love to be able to make them at home!
 
Hello neighbor. You can try calling the restaurant and see if they will give you the recipe.Some of Disney's restaurants will gladly do it.We have gotten quite a few recipes while there and they sometimes have copies printed out to take home.It must be the Pixie dust;somehow they never taste the same at home.:D

DISNEY’S YACHT & BEACH CLUB RESORT
GRATIN POTATOES

Ingredients:

40 lbs. Idaho Potatoes – sliced thinly
10 lbs. Asiago Cheese – shredded
7 qts. Heavy Cream
15 lbs. Leeks, diced, sweated with olive oil
9 lbs. Brentwood while corn, sautéed in butter seasoned with salt & pepper
4 oz Kosher salt
2 oz Steakhouse Peppercorn Blend

Method:

Preparation Time: 1 hour 45 minutes
Sweat leeks in olive oil until translucent
Sweet corn in butter mix all ingredients together; mix to develop starch.
Place potatoes in a greased (pan release) 2” hotel pan, fill halfway, add a layer of Asiago cheese. Fill remaining space in pan with remaining cream in bowl and put a layer of cheese on top.
Cover pans with parchment paper and top with foil.
Bake at 375 degrees 1 hour then lower temperature to 300 degrees 1 hr min, remove foil and check potatoes with paring knife or thermometer. Potatoes should be soft (Mot mashed through) When cut, layers should still be evident!
