WWYD? Which day would you choose at IOA/HP?

We are heading down to FL Nov 25-Dec 5. We'd rather go to HP on a non-scheduled Disney day. The only ones of those we have is Nov 25-27th or Dec 3 or 4th. We'll be leaving to early on Dec 5th to go that day. I know the park will be crazy busy the weekend after thanksgiving but would it be bad the Saturday after that? We had originally planned it for during the week, but it would really mess our dining plan up. Any advice? TIA!
