can you share the recipe when you get the chance? it sounds great.
I do not drain the tomatoes. I also used boneless skinless thighs and cooked more than called for. I doubled the entire recipe and that makes a lot.
[FONT="]Smothered chicken with barley (core)
1 teaspoon ground cumin
3/4 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon dried mint flakes
1/8 teaspoon garlic powder
1/8 teaspoon ground red pepper
6 (4-ounce) chicken thighs -- skinned
1/2 teaspoon canola oil
Cooking spray
1 1/2 cups chopped onion
1 cup chopped red bell pepper
1 tablespoon low-sodium soy sauce
3 1/2 cups low-salt chicken broth
1 1/4 cups uncooked pearl barley
1 (14.5-ounce) can diced tomatoes -- drained
6 tablespoons chopped green onions
Combine the first 7 ingredients in a small bowl, and rub chicken with half of spice mixture.
Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken; cook 1 minute on each side or until chicken is browned. Remove the chicken from the skillet.
Recoat skillet with cooking spray; add chopped onion, bell pepper, and soy sauce. Cook over medium-high heat 3 minutes or until vegetables are lightly browned. Add broth, barley, tomatoes, and remaining spice mixture, and stir well. Add chicken to skillet, nestling into vegetable mixture. Bring to a boil; cover, reduce heat, and simmer 55 minutes or
until chicken is done. Let stand 15 minutes. Sprinkle with green onions.[/FONT]

I lost 0.8 lbs better than nothing I guess.
I am going to Miami next weekend and hope to lose a few more before we go, as it is going to be hard while I'm away. It is a work think (DH)- banquets and such- I will just try to make good choices and watch portions. That is about all I can do.
Do the best that you can. Healthy choices whenever possible and remember how it used to be.

I had my monthly weigh in yesterday and I am so happy that I am only .8 over what I weighed in December, not bad since I packed on all that weight over the holidays. I am down from my New Year's Day weight by 7.4 pounds, so I can not complain. Only 5.4 to go to get back to by 5 pound cushion.
My WI was yesterday and I'm down 2.8 lbs!

I have to set my goal soon, I think I might do another 10 or 15 lbs and call it good for now. I think I may ultimately want to get lower, but I'm not sure. I could technically set it at 150, which would be 2 lbs, but I think I wouldn't do well to all of a sudden shift my focus like that. I've got all week to think about it, although I've been thinking about it for the last month and still haven't come up with a number....

Good morning everyone. I haven't been around lately and have miss this thread. I spend last week in disney world on the dining plan, and am now back on track. We got home wed night, and thursday i got right into on program and started tracking, and saturday weighed in and was thrilled to have stayed the same. Plus, the day before I left on vacation I had a 1.8 loss, so I thought for sure I would have gained that back. I did enjoy the dining plan, and because we had the refillable mugs, I'd always get a water with my meals, and that helped me to keep drinking. I stayed away from the fries, but did have many desserts, but didn't finish a chocolate cake because it wasn't worth it. That's not like me. We did walk a lot, and that really helped. My goal now is to keep tracking, and stay on program.

Tonight is WI and I am nervous. We had a death in our family and while I thought I would be fine, at the reception there was nothing but comfort food. I mean not even a green salad. It was good food, but I am not a disciplined person so even though I watched my portions it was the beginning of a trend for the rest of the week. I am back on track tonight though. I'll share after WI. Dinner tonight is a bean burrito bake and salad. I am following Simply Filling from week 6.
Bean Burrito Bake
1 pound meatless soy crumbles or core ground beef (I used beef, I cannot
stand soy beef)
1/8 cup reduced-sodium taco seasoning (1/2 packet)
3/4 cup water
15 oz canned yellow corn, no salt added, drained
14 oz canned diced tomatoes with green chilies (mild) (I used a can of
rotel)
15 oz fat-free canned refried beans
5 oz tomato paste
2 cup ff Shredded Cheddar Cheese (i used shredded soy cheese)
4 cup cooked brown rice (i used 2 1/2c cooked bulgur
1 medium onion(s)
Instructions
Dice onion and saute in large skillet with soy crumbles
(or use 1 lb of Core acceptable ground meat).
Add water and 1/2 packet of taco seasoning.
Simmer until sauce thickens.
Add canned veggies, tomato paste and beans.
Spray a casserole dish and fill with veggie/bean/soy mixture.
Top with 1 c. of shredded nf cheddar cheese.
Cover with cooked brown rice. Sprinkle remaining cheese over top.
Bake covered at 350 until heated through, 20 min.
Remove cover and continue baking until cheese is melty, 5 min.
