Work: Pitch-in Holiday Brunch! Need suggestions...

Instead of an after-hours party, my work group is having a pitch-in brunch at one person's home.

The hostess is providing the main dish (breakfast casserole) and drinks. Someone else has already signed up for a hashbrown side casserole. We're supposed to sign-up to bring other stuff...

Help!!! I don't want to be boring (i.e., fruit salad), but want to bring something exciting!

Any suggestions?
 
How about some sort of sweet bread or muffin? Our favorites include Strawberry Banana Bread from WL, Orange Muffins & Clyde's Coffee Cake - made as muffins. I also found a recipe for Peach French Toast that's done as a casserole that we're going to try for Christmas. I've posted the recipes below so you don't have to do a search.

ORANGE MUFFINS

1 orange
1/3 c fresh orange juice
1 egg
1/4 c unsalted butter, softened
1 1/2 c flour
3/4 c sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 c raisins

Grate rind from orange. Remove skin and pith and any large white pieces from orange. Cut orange into 6-8 sections, remove seeds. In blender, blend rind, orange, juice, butter & egg until soupy with butter in little bits. Toss in raisins & blend 2 - 3 seconds. Pour into mixing bowl. Sift together flour, sugar, powder, soda & salt. Combine with wet ingredients - combine only, do not mix or beat. Pour into greased muffin tins. Bake at 400 for 15 - 18 min. Yield: 12 (If omitting orange, use 1 1/2 tsp orange rind & additional 1/3 cup orange juice. If using craisins, soak first!!!

PEACH FRENCH TOAST

1 c packed brown sugar
½ c butter or margarine
2 Tbl water
1 can sliced peaches, drained (29 oz.)
12 slices French Bread, 3/4 inch thick (day old)
5 eggs
1 ½ c milk
1 Tbl vanilla
ground cinnamon

In a saucepan, bring brown sugar, water & butter to a boil. Reduce heat & simmer for 10 minutes, stirring frequently. Pour into a greased 13x9x2 inch pan. Top with peaches, arranging bread over peaches.
In a bowl whisk together eggs, milk & vanilla, slowly pour over bread. Cover with foil and refrigerate over night.
Remove from refrigerator 30 minutes before baking. Sprinkle with cinnamon.
Bake at 350 for 20 minutes covered. Remove cover & cook for 25-30 minutes or until bread is golden brown.

Clyde’s Coffee Cake
2 c flour
1 1/2 c sugar
1/4 tsp salt
1/4 lb butter, melted
2 tsp baking powder
1 egg
1/2 c warm water
1 tsp vanilla
Combine flour, sugar, salt & butter. Reserve 1 cup for crumbs. Add baking powder, egg, water & vanilla. Mix only until moist. Pour in greased 8x8 pan. Bake at 350 for 30 minutes. Double to make 3 dozen cupcakes.

Strawberry Banana Bread
from the Whispering Canyon Cafe, Wilderness Lodge
2 tsp baking soda
1 c butter
2 c sugar
3 c Flour
1 tsp salt
4 eggs
1 ½ lb strawberries
2 c bananas
(~6 medium)
Grease two loaf pans & preheat oven to 325. In a large mixing bowl, cream the butter & sugar. Incorporate bananas scraping sides of bowl. Add the eggs one at a time, mixing thoroughly after each. Set aside. In another bowl, mix together salt, baking soda & flour. Add flour mixture to butter mixture & stir until blended. Add strawberries (thawed). Bake 60 to 75 minutes or until a toothpick comes out clean. Cool completely on a rack before inverting onto a plate.
 
I posted this on another thread under "breakfast appetizers" They are really easy, and you can make them ahead if you need to. This recipe has always been a hit whenever I have taken it somewhere.

1 lb. of pork sausage (we usually do Hot, but use your preference)
1 lb. velveeta cheese
1 package cocktail mini rye bread

Brown your sausage until crumbled and drain. Add cheese and stir until melted. Top each slice of mini rye bread with a dollop of sausage mixture. Bake 15 minutes at 450 degrees. You can also freeze these (unbaked) on cookie sheets until frozen then store in a freezer bag. Just pull out as many as you need, place on a cookie sheet and bake as directed above. You don't even need to thaw them out.

We have also served these as appetizers anytime of day, not just breakfast!
