OK, here is my DELICIOUS low carb Easter breakfast!

These products have suddenly filled a void in my breakfast diet that I was not even aware existed. Eggs get a bit old after a while, so this provided an unexpected, and wonderfully different menu.

These pancakes were absolutely YUMMY!! I made them the other morning, and in my haste, undercooked them, and they were kind of "blah". Today I had patience, and they turned out scrumptious!

This syrup tastes exactly like the "real" thing!!

Although they do not list nutritional info on the site yet, it contains ZERO carbs, AND ZERO calories!!! (unbelievable, but true)!!!


This is something that I want everyone who is becoming bored with breakfast to try. It has given me an option for those mornings when a sweet, "bready" meal is what I desire.

Thanks for the links John- I've wondered a loy about these products- it's good to have some feed back on them. I'm soooo excited- I just found out thta we have several big stores- totally dedicated to carb free and low carb foods. COOL!
 
My husband prefers waffles to pancackes. Thanks for the link John, so far we have just tried the Atkins pancake mix.

Someone here told me how to thicken this pancake syrup. I can't remember who it was :( I like to give credit where credit is due.

Anyway, I tried it last week. I added about 1/4 teaspoon xantham gum to 1/2 cup of the syrup. It worked-- it thickened up like real syrup. It lost the clarity, it was a little cloudy but my husband loved it.

If you want a delicious pancake or waffle without buying a pancake mix, try this... it's absolutely WONDERFUL, and you can make either regular pancakes/waffles, or a savory waffle that doubles as "bread" for sandwiches. They're great!

Sherrie's Buttermilk Pancakes (also makes great waffles!)


1 8oz Pkg cream cheese
3 eggs
3 tsp Splenda
1/4 cup Atkins Bake Mix
1/2 tsp baking powder
1/2 tsp vanilla
1/4 cup buttermilk

Beat cream cheese with mixer until blended smooth, add the remaining ingredients and let sit for 5 minutes before using. Preheat non stick pan to med/high heat. Spray pan with a light coat of butter flavored non stick spray and pour in pan about 3 tbps of mix. I made them about 5 to 6 inches across. Be sure to let bubble up all over just like the flour pancakes before turning!

Eat your heart out Aunt Jemima, these are as good as the real thing!

Makes 10 large pancakes @ 1.7 carbs per pancake

Sherrie's Savory Burger Bun

*Preheat the waffle iron

1 8oz Pkg cream cheese
3 eggs
3 tsp Splenda
1/2 cup Atkins Bake Mix
1/2 tsp baking powder
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp parsley flakes
1/4 cup buttermilk

Beat cream cheese with mixer until blended smooth, add the remaining ingredients. Spray pan with a light coat of olive oil flavored non stick spray and pour in pan about 1 tbps of mix. It will make a perfect round bun! You can freezed them and reheat them in the toaster! My hubby says this is the best bread yet.

It should come out to about 1 carb per bun! (dizneegirl's note: I usually have to use more than a tablespoon per "bun"... do your own math on the carb count. :))

Make your own Atkins Bake Mix

1 cup soy flour
2 cups soy protein isolate
2 tablespoon baking soda
1 teaspoon salt
2 tablespoons Splenda

Sift together then store and use as you would Dr. A's. It's much cheaper and things come out about the same.

3 carbs per 1/2 cup serving
