Ingredients:
1 cup shredded coconut
4 large scoops vanilla ice cream
1/2 cup Hershey chocolate syrup
whipped cream (in a can)
4 large, ripe strawberries
Cooking Instructions:
1. Preheat the oven to 300 degrees.

2. Spread the coconut over the bottom of the inside of a large oven pan. Shake the pan a little to spread the coconut evenly.

3. Bake the coconut for 25-30 minutes or until the coconut is a light, golden brown. You may have to stir or shake the coconut in the last 10 minutes to help it brown evenly.

4. When the coconut has cooled, pour it onto a plate, or into a large bowl. Roll each scoop of ice cream in the coconut until it is well coated. Press down on the ice cream to help the coconut stick. Put the ice cream into four separate bowls.

5. Heat up the chocolate syrup for 10-15 seconds in the microwave. Pour about two tablespoons over each scoop of ice cream. Try to completely cover the ice cream with chocolate.

6. Spray some whipped cream on the top of each scoop of ice cream.

7. Cut the stems from the strawberries and place one on each serving; upside down on the whipped cream. Serve with a spoon.
 
I'm here, and I'm ok! Lyzzie was really scared at the dentist and cried a LOT - it was heartbreaking. I don't think I've ever heard her cry that hard. They put in a ton of novocaine shots and she screamed through them all, but the actual extractions were very fast. There was almost nothing left of the teeth below the gumline so they popped out pretty easy. I took all the girls for ice cream afterward (my mom is sitting Lyzzie's friend too) and my mom bugged the crap out of me! She stood right behind me the whole time and kept contradicting EVERYTHING I said and just hurried us along. I called her after she got home and told her that I was trying to console Lyzzie and do something special for her, and she ruined it. She just doesn't get it. Then she wanted to know if it was ok for Lyzzie to eat M&M's. Uhhh, NO! :mad:

My mom was also wrong when she told me that they are going to fit Lyzzie with a bridge. They are going to give her a "spacer" which is basically just a wire going behind the teeth from one back tooth to the other. It keeps the teeth from crowding into the hole but does NOT cover it up in any way. Great, she's going to have this big 2-tooth hole for a few years. Y'know, it's nice that I have her to watch the kids and take them to appointments and such, but it's SO stressful because she never pays attention or tells me just completely made up stuff and then gets so mad at me when I don't understand what's going on with my kids.

Unfortunately the apartment wouldn't be available until Feb 8- and our lease would be up before then- and the rental truck is only for 5 days- and nobody wants to have us at their house with a dog and 2 cats-:scared1: but hey, I'm not stressing.............:lmao:

Guess you'll just have to stay in a hotel in the meantime, maybe you can find a nice one in the Orlando area. ;)

I thought the same thing about the DDP until I read further, drat! I like dessert better than appetizers, but I do wish they'd give a choice. I'm sure there will be more changes. Your pictures are beautiful! I love that dress you have on -- oooh la la!

2x2s: I know with my camera if I use regular batteries it sucks the power out REALLY fast. I can only take about 5 pictures before the batteries are dead! :eek: But rechargeables last a LOT longer - even at WDW they will last all day. I have also found with the rechargeables that there is a difference between brands, some hold a charge longer than others. Energizer makes good rechargeables. Be sure to let the batteries completely drain before charging them and they will hold the charge longer. Also, once they're a couple years old they just don't seem to charge all the way up or hold the charge as long.

Amber: I swear company maternity leave policies must be made by men. 6 weeks is NOT enough time! Our company makes you use all of your sick/vacation/personal time for maternity leave before you can go on STD, and if you have already used it then you have to take the equivalent number of days unpaid before you can go on STD. It totally stinks. There is one woman here who was hugely pregnant last November when I started, I think she had her baby last January, and now she is due again in a matter of weeks. That poor woman gets NO vacation time for two years because she has to use it all for maternity leave!

Linda: I finally got to see your Photopass pictures! They look GREAT, I'm really getting excited about the GF photo shoot. I saw some other familiar faces in there too! I hope you feel better soon, this is bad crud going around.

Linda, great pictures! I hope you feel better soon. I am getting over a cold (which sucked, because I can't take any medicine).

Lyzziesmom, poor Lyzzie. I despise the dentist, so I understand her pain.

I hate that we only get six weeks. I wish the US was like Canada and England, because they about a YEAR. Mike says I can take as much time as I want, but I worry about not getting paid (especially since we never know what is going to happen with his job :guilty: ).


Oh, about batteries. I have found that Energizer lithium batteries last a REALLY long time. I do keep a few rechargables around to use in a pinch, but I much prefer the lithium.

I figured out the tip thing - it's automatically figured into the ticket IF you use Disney Dining Experience (the 20% program), which we will use. The tip and the discount both are figured pre-tax. Whew! Glad to get that figured out. We're really close money-wise either way, but with the DDE, we can get in a couple table-service lunches and breakfasts, too. With DDP of course, lunches are all counter service and breakfasts will all be extra, too. I figured our DDP total including what we would pay for tips, and included a snack and bottled water every day for each of us in my non-DDP total. non- DDP is a little more money, but I figured it with all of us having salads before our entree, or (just) one appetizer before the entrees. I also figured entrees on the high side - if Erin's not on the DDP, she'll likely order stuff off the kids' menus at some meals. Are you all confused??? me, too. And now I have this ENORMOUS pile of beans at my feet.

Pozey - so have you decided if we get to see a photo or not?

I wish!!! But since its such short notice, our funds are pretty limited. We got the call that we were approved by the apartment place :cool1: They just need to talk to the people here and make sure our renting history is ok.
 
question for you recent WDW guests:

Are they automatically charging an 18% gratuity at all table service restaurants now? I thought I heard/read that they were going to implement that and I'd like to know for bean-counting purposes.

We weren't on the dining plan this time and we actually ate and spent less. When we were on dining plan last time I felt like we ate so much I couldn't enjoy myself for hours afterward, so this time we split an appetizer, entree and dessert at each table service meal and didn't leave feeling like Pooh after a little too much hunny. I also got a couple of kids meals at counter service and they were huge! Totally enough food.

Lyzziesmom, poor Lyzzie! I hope the extractions help and her gap closes quicker than planned. Sorry your mom was being a pain again. Yesterday my mom was making me crazy trying to make me feel guilty about going to Disney over Christmas. I finally told her that she spent the last 20 years complaining about how her mom always made her feel guilty about everything and that because of that it wasn't going to work on me so knock it off. She was speechless and I was so glad I finally said it. Of course it will only last for a week and then the guilt tripping will start again!

I cleaned my bedroom today...it was disgusting...I hate to clean and therefore I pretty much don't do it. Maybe I need to do it a little more often... Sassy has been at the vet all day and poor Minnie has been mopping around all lonely all day.

that is so awesome Mike says to take as much time as you want!!! He sounds like such a great guy! I went back when Kenny was 6 weeks and it killed me! I wanted to be with him SOOO bad. It didn't take long to see that taking care of a newborn by myself:rolleyes: (thanks to my ex, a whole other story) and trying to work 12 hrs a day...was way too much. So, I cut down to just working M,W and F's. That worked out great! I did that until we left when Kenny was 2 1/2.

April 06 we did the ddp and it was just SO much food:eek: we didn't do it last time, or in Feb. Like this time, Kenny and I would usually just share, or at some counter services, I would order he and I both a kids meal! It was still too much food. I agree w/Lin. I just hate trying to walk around SO full. I don't feel like doing much for hours later. we end up planning our days around our meals...we did some nice table services, but didn't overdo it too much. The creme brulee at Coral Reef:love: boy was that good! I got some pics of the divers too. All I could think about was when you were there:cloud9: how awesome it must have been!!! A stingray literally lived by our table, a shark kept circling by and when I saw a sea turtle, I got ALL excited:rotfl: It was hilarious. I kept grabbing for my camera like a kid in a candy store:laughing:

Lin - yeah, with the DDP you eat SO much. We use it and I feel guilty not eating all three items - like I'm wasting the money if I don't. We rarely eat any dessert, but of course on the DDP we were eating it twice a day! With the changes it's just not worth it!

Linda I know you'll get the hang of that lens! I chuckled about your Coral Reef meal - did any of the divers come up to the windows? I did - it's amazing how easy it is to communicate in the water, through the glass, with a regulator in your mouth that "I want your margarita" to the couple on the other side of the glass. They laughed. We're going to dive again in May and eat at the Coral Reef after. Which sea turtle did you see? There's on in there that's kind of a beige-ish color that is HUGE.

Ashley - good news about getting OK'd by the new apartment complex!

Amber, the six weeks off really stinks! It's SO hard to leave them when it's time to go back to work! Gee it's right around the corner and Spencer will be here! Don't be too nervous or stressed out about him coming.... just think, you're in the home stretch then you'll have your beautiful boy!
