Good morning everyone!

Sorry, been MIA-- my family picked up some kind of nasty bug this week. I'm finally back in the land of the living. BTW-- it's -6 right now and we woke up to about 6 inches of new snow. I'm freezing with sewer! I'm really, really over winter!!!!!!!!

For all those going to WDW-- have a great and safe trip! Let's see, according to the "schedule" they are going to Epcot today.... Let's say we join them (in a virtual way) here:

Well, with all this talk of WDW, I broke down and booked our Disney cruise in December. I'm dreaming of warm places again! We are going to tack on a week at the parks to either the beginning or end of our cruise. Still undecided there.

I too am sorry if I am too late to say bye to anyone who is leaving - or has already left.

When I came in to work yesterday and came to the Disboards.....I got a message that our company now is blocking some sites. Message boards being one of them. Well being the dedicated cliqueless cliquer (and certified computer genius) that I am……I found a way here.

I may not be able to post quite as much unless they un-block the sites.

Anyway……To all who are leaving or have already left……….Have GREAT FUN. I see the weather is going to be kinda chilly as well. Safe travels to all!!

I just realized that Pozey never posted the cheesecake recipe!!!!!

Okay……I’ll try to do this off the top of my head.

But remember…when I cook and bake, I don’t always measure everything out exactly.

For the crust, I REALLY don’t follow directions. I get a box of graham crackers and use a small food processor to grind the entire box up into tiny pieces. I will put the graham crackers in a mixing bowl and then melt some butter. I start out with 1 full stick of unsalted butter. Pour the melted butter in with the graham crackers and mix with a fork. I will also add just a little bit of vanilla extract and some ground cinnamon. Add enough butter to the graham crackers and mix with the fork until the graham crackers become somewhat sticky.

Pour graham crackers into a springform pan. Press down on bottom and up the sides.

Bake graham cracker crust at 350 degrees for 5 minutes.


For the filling:
5 pkgs Cream Cheese (softened)
1 ½ cups sugar
3 eggs
2 ½ tsp vanilla extract

Beat Cream Cheese until smooth.
Slowly add sugar a little at a time and beat at medium speed.
Add eggs one at a time. Beat at medium to high speed.
Add vanilla and beat until creamy.

Now, the cheesecake I make most often is a chocolate marble cheesecake. In addition to the above basic ingredients, I add some semi-sweet chocolate.

Melt 4 ounces of semi-sweet bakers chocolate.
Mix half of the basic cheesecake mixture with the chocolate.

In the crust, pour half of the chocolate mixture, then half of the basic, then almost all the rest of the chocolate (save a little to swirl on top), the rest of the basic, then the rest of the chocolate on top.

Bake at 350 degrees for 40 minutes. After 40 minutes, turn off the oven, open the door slightly, and leave the cheesecake in there for another 30 minutes.

Refrigerate over night.

Enjoy!!

Right off the top of my head......no....not exact size. But it is a pretty big springform pan. If I had to guess, I would probably guess 9 inches maybe 8. And 3 or 4 inches deep.
