PD - I love lattes...but will pick a fountain Diet Coke (especially at McDonalds) any day of the week!

TW - I agree with you...it IS a nice trade!

Well, I have to say the Spinach, Chicken & Pasta casserole was really good! I will definitely be making that again. I (finally) have that Vanilla Bundt Cake in the oven. It's a plain jane cake - but it's scratch - so that makes a difference. Anyone want a slice? It comes out of the oven in 57 minutes!

It was sad to see Brooke got voted off, but not really surprising...Its going to be sad to see any of them go now...I like them all...Im thinking Jason will get the boot next week..unless he does a GREAT performance...BUT on the other hand IF young girls are voting, and my DGDs are any indication of what young american girls like..ALL the girls will get voted off first...THEN its a fight to the finish with the guys...Julia really likes David Cook, and Brittany is over the top for Jason....and they all think David C.(?), is the cutest...
Its a hoot to watch it with them( we DVR it for them to watch o Sunday)...Mike gets a real kick out of it...BUT when the guys come on to sing.....GET THOSE EARPLUGS....LOL

That is what I'm not doing tonight when I should be.

The dance teacher called earlier today and said she had a pipe break at the studio and it flooded:guilty:

Poor girl.

Last year a fire and this year a flood:sad2:

I told my boss this the am.

Got stuck at work late this am, then got home & went to the :laundy: (had way too much too do home), then went to WalMart & stiocked up on food. We were totally outta junk food here:eek: The inmates were getting restless.

Anyhoooooooooooo Got to bed around noon, woke up at 5. Made Roast beef Sandwiches for Dinner , took a Shower...and the Phone rings!!!!

Its my Boss to tell me that I dont have come to work tonight because the client left. :rolleyes1 He calls me at 7:00...I am suppose to be at work at 7:00! :hippie:

Chicken 'n' Spinach Pasta Bake

8 oz uncooked rigatoni
1 Tbsp olive oil
1 c finely chopped onion (about a medium onion)
1 (10oz) package frozen chopped spinach, thawed
3 cups cubed cooked chicken (I grilled extra chicken breasts the other day and I'm using that)
1 (14.5oz) can Italian-style diced tomatoes
1 (8oz) container chive-and-onion cream cheese
1/2 tsp salt
1/2 tsp pepper
1 1/2 cups (6oz) shredded mozzarella cheese

1. Prepare rigatoni according to package direction
2. Meanwhile, spread oil on bottom of an 11x7 inch baking dish, add onion in a single layer
3. Bake at 375º for 15 minutes or just until tender. Transfer onion to a large bowl, set aside.
4. Drain chopped spinach well, pressing between layers of papertowels (believe me - you DON'T want to skip this step - voice of experience here!)
5. Stir rigatoni, spinach, chicken and next 4 ingredients into onion in bowl. Spoon mixture into baking dish and sprinkle evenly with shredded mozzarella cheese.
6. Bake, covered at 375º for 30 minutes; uncover and bake 15 more minutes or until bubbly.

Serves 4 to 6. Note: You can substitute sausage instead of chicken. Use 3 cups cooked, crumbled Italian Sausage and cut salt & pepper measurements in half.

We stopped in just to let her know we cared about her and her mess this afternoon.

I heard her tell Liz that she held it together pretty well until after she called the insurance company.

Then she sat down and cried:guilty:
 
I just looked at the dance studio website.

She posted on there about her fire of last year and now this years flood.

She also says the upside of all of this is that she is getting really good at renovations:rotfl2:
