My mom and I are planning on eating dinner at wcc, we are both small, and don't usually eat too much. Is it accaptable to order one "all you care to enjoy skillet" and one appetizer, or would this be frowned upon?

You can't share all you can eat meals. You can order and share plates that are not all you can eat, appetizers and desserts.
 
Anyone who eats from the family skillet at WCC will be charged because it is an all you care to eat meal. Just like a buffet or any other all you care to eat venue (e.g. 'Ohana, Garden Grill) you will both be charged.
 
You can ask that the volume of food be less on the skillet, but you will each pay full price to eat, regardless of how much or how little you actually eat.
 

I can't remember if we ate breakfast or lunch there, but we ordered everything a la cart. We didn't get the skillet.

Ditto. Ask for food for one, but you will be still charged for 2.
