If you have the chance of visiting during the holidays again, then I would choose the Diamond celebration show. The holiday one this year was almost the same as the one I saw a couple years ago, just with some Frozen stuff added in, so I'd imagine it would still be the same basic show in subsequent years.
I saw the holiday version the last 2 years and saw the Diamond Anniversary version in October. I liked the holiday version better. The content in the Diamond Anniversary version was better, but I thought the holiday version was more visually appealing.
I saw the holiday version last year and the WoC: Celebrate in October and honestly, it depends on whether you want to see a holiday/Frozen show or a Disneyland/Disney Movies show. Neither was markedly better than the other to me, so it really depends on your family's preferences. WoC: Winter Dreams features lots of wintry/cold scenes, with a lot of Frozen in it (especially Olaf and Let It Go). It ties in nicely with the holiday atmosphere in the parks. WoC: Celebrate features more Disneyland nostalgia, mixed with clips from a variety of animated movies. I wasn't a huge fan of NPH's performance (his voice is a little thin compared to the other vocals), but overall, it was an okay show.

Your boys will likely enjoy the Celebrate show, since there is more "action" and also Star Wars.
Celebrate is a new show, significantly different that the "regular" WOC.
I love both shows, and watched both this evening. Winter Dreams is my favorite, since I'm a fan of Frozen and Olaf.
Have they cleared up how the show selection process for dinner packages works? the parks blog said that when you called to reserve that you would be asked for your preference of show. however, early reports were that cast members were not taking show requests. has this been resolved?

I would choose Celebrate. I know there's been criticism of too much NPH in it, but I really loved the show. I'm glad I got to see both, but if I could only choose one it would be Celebrate.
Eta: I loved winter dreams too, so I don't think there is a bad choice here. But I would imagine winter dreams will stay fairly similar, with just minor year to year changes, for a while so we may have an opportunity to see it again. If celebrate is only around for the 60th, then this trip was our only chance to see it.

They didn't ask me when I made the reservatipn, and I forgot to call in after that blog went up. They just asked us after we sat down at the table which show we wanted.
