oh, wow! was not expecting this many responses. thank you to everyone that has replied thus far!
a few more details that might help, my apologies for not including this information before:
-I would actually be the youngest on the trip! My parents would be coming along, possibly my brother(who would be in college during that time),but no one else.
-My mom is a fitness nut so I guess I need to look into hotels that at least have a good jogging path? seems like most of the deluxe hotels have health clubs, though.
-Conversely, my dad likes to lounge around at the pool so a pool would be nice; maybe a quieter pool, I dunno.
-The last time I went to Disney World...well, it was a 3 and a half day trip, so it was a little stressful; I'd like to be able to really take my time exploring the parks, which is why I'm dedicating two days to both the Magic Kingdom and Epcot, and also a break day in the middle of the trip to relax at Disney Springs and stuff.
And the specific itinerary(cant provide travel times or anything since, again, this trip wont be for a while, but hopefully this is helpful!):
Day 1-Arrival&Hollywood Studios
Day 2-Magic Kingdom part 1
Day 3-Epcot part 1
Day 4-Break
Day 5-Animal Kingdom
Day 6-Magic Kingdom part 2
Day 7-Epcot part 2
Day 8-Departure

OK, I would still recommend the Poly or CR - with the Poly in the lead. Four of your days are intended to be at either the MK or Epcot, one day is devoted to the AK and arrival day has time planned for DHS. To me that means easy direct access to the MK and Epcot would optimize the convenience factor. the Polynesian allows direct monorail access to both these theme parks. (You get to Epcot by walking to the TTC and taking the Epcot monorail from there)
You are right, the theming at the Poly is amazing. The pool and grounds are really spectacular and you have walking or boat access to the GF, monorail to the CR and a combination of monorail/boat to FW and WL. You don't have small kids, but I often travel without small kids and still love the MK area best.
If you were to consider a split stay, I might do something like: ( similar to your original plan but flips the MK to the end in order to take advantage of resort proximity)
Stay at BWI first three days
Day1 - arrival and DHS
Day2 - Epcot part 1
Day3 - AKL
Day4 - moving to Poly in am/DS from about 11am to 3pm /relax day
Day5 - MK part 1
day6 - Epcot part 2
day7 - MK part 2
Day8 - departure
You get to try a new resort (BWI) and still return to the historically well liked Poly. You take advantage of the proximity of the resorts to minimize bus travel. You also get to enjoy the night life of the Epcot area as well as enjoy the magic of staying in a resort where you can watch Wishes and the castle change colours from the beach.
Relaxing at the pool at the Poly is really nice! If the pool is a big deal to your Dad you might want to consider the YC/BC for StormAlong Bay. However, the quiet pool at BWI is very nice for just relaxing, IMO.
