Which park for a second day (other than MK)?

We (family of 4, two kids 5 and 7) are booked for early February 2023, and I'd like to get our park reservations done soon.

We will have 7 park days - every day of our trip except the travel days - no park hopper. We won't do full days in the park, except maybe for parks we are visiting only once. We will use Genie+ as needed, although hopefully not every single day.

Does this make sense for our days?

MK - 3 days
HS - 2 days
EP - 1 day
AK - 1 day

I am mostly debating if I should have a second day at EP instead of HS. We are big Star Wars fans, but the thrill rides at HS are probably too much for my kids. But I figure it is generally easier to change our reservations from HS to EP later than the other way around? I loved Epcot as a kid, but I know it has changed a lot, maybe not as appealing compare to HS?

I can’t tell you what you should do, but here’s how I answered that question for myself: I asked everyone in my family what attractions/rides, shows and restaurants they’d like to experience, and the parks that had the longest list of stuff (or most difficult to accomplish stuff) are the ones we will visit more times.

This makes sense to me. I would do each park once and then adjust park pass reservations for the rest of the trip based on interest & availability. However it is usually harder to get MK and HS reservations so your approach is what I would do.

I'd consider 2 days Epcot because it's so big and easier to do one side each day. Definitely makes it a more fun park for kids when they have time to explore the pavilions, watch the shows, try snacks, look at the aquarium, etc. without parents rushing them off to another line.
