which days for which parks

I'm not sure which forum to post this in, so here goes...
I have been so on top of everything, planning this trip since July 2021 but I dropped the ball on this one detail. I only now just realized that I didn't check every single Christmas party date of our stay, just the one I wanted and the one for our second MK day (which isn't a party which I was happy about).

The day we are doing our party, Tuesday November 15th we are doing HS in the am, resting, then going to the party.
about 10 minutes ago I just looked at party dates again and now see that our first day in the parks, Monday November 14th, which we have reservations for MK for, is a party! we don't want have to leave early on our very first day. I wanted to start and end the trip with MK but I might be throwing that out the window.
So long story short, I feel woke I need a little guidance or ideas on when to do what and why!
Here is what is solid and what is currently reserved/planned

Saturday Nov. 12th, arrive to POR Riverside , have dinner somewhere ?
Sunday Nov. 13th: storybook dining
Monday Nov. 14th: Magic Kingdom, dinner at Cinderellas Royal Table
Tuesday Nov. 15th: Hollywood Studios. we have tickets for the Christmas party
Wednesday Nov. 16th: rest day, lunch at The Boathouse, dinner at Storybook if can't reserve it for Sunday night
Thursday Nov. 17th: Animal Kingdom, dinner at Tiffins
Friday Nov. 18th: check in to The Beach Club , Epcot, lunch at Space 220
Saturday Nov. 19th: Hollywood Studios, lunch or dinner at Sci Fi
Sunday Nov. 20th: pool/cabana day at Beach Club, lunch at Beaches and Cream, Epcot in evening, dinner at Le Cellier
Monday Nov. 21st: MagicKigdom, dinner at Be Our Guest

I would love any help. How would you organize this?
we know we want two
solid days in MK and we know we want two days for epcot (or at least a day and a half). We don't have park hoppers. I am currently considering canceling Beach Club and staying at Riverside the while time to have a better chance for dining we really want. Still deciding on this.

If Christmas party days are light on crowds like the Halloween party, I wouldn't feel too deflated, you might have the best day ever! However, and I get starting the trip in MK, but you might want to think about starting in Hollywood Studios and on your party day, spending all day in Magic Kingdom, especially if you don't have hoppers. Reading recent reports of crowds at 4pm for the Halloween Party are making me question why I'm doing this to myself next month 🤣 if you're already in MK on your party day, you won't have to deal with that 4pm gate madness.

Also, I think you'll have a really difficult time getting Storybook Dining and Cinderellas table those first couple days. Even if you switch MK to the 15th, you'll probably have better luck getting BoG that day and Cinderellas table on the 21st.

Oh right, that split stay... You'd definitely have difficulty with space and probably scifi as well. Might be good to have a single stay, like you said, to ensure you're able to get those if they're more important than hotel location.

Keep that first MK day even though it's a party. You will get more done during a party day with a 6pm close than you can during a full, non-party day.

Each of the party days so far have been in the lowest MK days of the whole year. That's somewhat deceptive, as they benefit from both low party day crowds and low time of year crowds. By November, you won't have quite the "walk on everything" experience, but it'll be your most pleasant, least crowded day in any park.

Make the latest CRT you can so that you can do parks all day, dine, and be escorted out.

The early night will also help you be ready for a park-to-party day the next day.
 
Since dining reservations have been so hard to come by I'd probably stick with your current plan and shift things around if you have to based on what is available. I guess if anything you could move your MK to Sunday which isn't a party day and is currently a rest day for you?

I also wouldn't cancel Beach Club if it was me for the dining window. I think the restaurants you have at the end of your trip are pretty achievable if you aren't a super large party. Space 2020 is in your first window and I'd love to be at a hotel that is walkable to parks. But everyone is different.
